Shrimps Arroz Caldoso in Cataplana

Since I saw the cataplana pot in Ana's blog I always wished to have one. A couple of weeks ago, a friend gave me a present, and it was a Portuguese cataplana....wishes do come true!

I still remember the warm breeze in Lisbon and the unforgettable taste of arroz caldoso de mariscos that we ate in Portugal.... now, I can make it at home....

Shrimps Arroz Caldoso in  Cataplana

3 tablespoons of olive oil
1 onion chopped
2 garlic cloves minced
1 red bell pepper in small cubes
4 tomatoes chopped
1 bay leaf
4 cups of broth I made my broth when I cleaned the shrimps
3/4 cup of white wine
2 cups of portuguese rice
16 shrimps (or 4 per person)
salt
lemon
cilantro

Clean the shrimps, and take the shell and head off. Boil it at medium lower heat with 4 cups of water. Strain it and set aside.
Heat the oil in the cataplana and add the onion, garlic, and bay leaf. Let it cook covered for 5 minutes. Add the bell pepper and the tomatoes. Let it cook for 5-7 minutes. Add the wine and the broth and let it boil. Add the rice and close the cataplana. Let it simmer for 20 minutes at low heat.Add the shrimps, and let it cook until they are pink.

Mix it and serve with lemon wedges and chopped cilantro....ENJOY!...it was delicious!!
