It was the time to celebrate Nowruz again...the spring equinox marks the beginning of the New Year in many cultures....and for us...it was a time to remember our friends and be connected again through the food!
Of course, we made Ash Reshteh....our favorite soup!
And our cookies....Nan-e-Berenjeni and Pistachio, Rose Water and Caju cookies
Naan-e Gerdooi
200 grams walnuts plus some for decoration
2 eggs
100 grams icing sugar
1 teaspoon vanilla essence
1 tablespoon rose petals edible
2 pods cardamom seeds crushed
In a food processor, grind the walnuts until they are fine, but not oily. Mix with the remaining ingredients. Make small balls, and decorate them with a piece of a walnut on top.
Bake them at 350F for 12 minutes......ENJOY!!
Happy Nowruz!! Many wonderful treats! Those cookies look literally melt-in-mouth and the ice cream is so creamy.
