Kimbap....Korean nori roll

We are having a very good weather here, and I love to eat Kimbap in warm days!

Kimbap is a way to eat everything in one dish, and to clean the fridge when we have some vegetables

Kimbap (Korean sushi)

1 1/2 cup of sushi rice washed. Cook it in boiling water as you do for sushi. Set aside, and when it is warm, add 1 tablespoon of rice vinegar mixed with 1 teaspoon of sugar.
Nori seaweed rolls
1 carrot
1 avocado
a piece of purple cabbage
1 can of tuna
mayonnaise
2 eggs

Mix the tuna with mayonnaise. Set aside.

Beat the eggs and add some water and salt. In a pan, add some olive oil and warm it. Add the egg, and make a plain crepe.

Wash and cut in julienne the carrot, wash and chop the blue cabbage, and peel and slice the avocado.

Place two nori sheets, and glue them with rice one on top of the other. Place the cooked rice in one of them.

In the other nori sheet, start placing the vegetables and tuna. My order was: purple cabbage, avocado, carrot, tuna, and the egg crepes (in slices). Roll it from the vegetables to the rice. Wrap it with plastic, and set aside for 15 minutes. Use a sharp knife covered with some oil to slice it. ENJOY!!
