This Christmas caught me running!....I just arrived from a trip, and I found that my family ate all the cookies and goodies I made before my trip!.....Now, I'm baking again!!
As usual, biscotti, panettone, bread with marzipan and orangettes, and almond cookies are on my Christmas table....
This year, I made a coffee cream liquor that my Nonna used to make, and I haven't done in years. It is simple and delicious, and we love it with a piece of panettone.
Coffee cream liquor
1 cup of water
1 cup of cream (35%)
1 cup condensed milk (more or less depending how sweet you like it)
2 pod star anise
3 piece of cinammon
6 cloves
1 bean of vanilla seeds or 1 tablespoon of vanilla extract
1 cup of Rum
4 tablespoon of Coffee beans
2 shots of espresso coffee
Place the beans in a clean glass container with the Rum. Let it macerate for a week until the Rum is very dark.
Mix the spices with the water and cream, and simmer then for 20 minutes at low temperature. Let it cool and strain it. In a blender, mix the water/cream with the espresso, and the condensed milk. Strain the Rum, and add it to the mix slowly. You can use the whole cup or half. It will depend how strong you like it.
