Macarons.....y Mas Macarons (I)




La vida viene con sus desafíos, pero estamos aquí para superarlos. Sin embargo, para superar nuestros retos, tenemos que conocer nuestras debilidades ..... y yo sabía que iba a necesitar  poner en práctica mi experiencia de investigación para experimentar con macarons ....

Mi amiga S. que es de Francia me dio dos consejos para hacer macarons. En primer lugar, tengo que tamizar la almendra y el azúcar por lo menos tres veces ...... pero .... ¿Por qué? ....Yo necesitaba saber la razón, y como se puede ver sin tamizar la almendra y el azúcar juntos se termina con un macaron lleno de pelotones de almendras y azúcar en polvo .... En cualquier caso, estaban deliciosos, pero con textura...

En segundo lugar, me dijo que necesitaba un bol de cobre para hacer la mezcla ...... pero .... ¿Por qué? .... Lo que necesitaba saber era la razón detrás del cobre porque no estaba dispuesto a comprar un tazón caro sólo para hacer macarons. Debia haber una razón .... Gracias a Google he encontrado la respuesta! ... Claras de huevo son esencialmente proteínas y agua. Los cuencos de cobre tienen un ion que reacciona con la proteína de la clara de huevo, lo que permite el desarrollo de una espuma estable y más voluminosa. ¿Compraría un cuenco de cobre sólo para hacer macarons? NO! .... Por lo tanto, comencé a buscar alternativas, y existen. Usted puede agregar dos gotas de limón. o una pizca de Cremor tartaro con el fin de tener el mismo efecto que los cuencos de cobre. A continuación, he hecho macarons con gotas de limón (color de rosa), y sin gotas de limón (blanco) y hay una diferencia en su altura. En el macaron verde, yo quería probar qué pasa si pongo nueces en la parte superior ..... no es buena idea ....!

A pesar de que mi primera ronda de macarons no eran perfectos, estaban deliciosos y nos comimos todo! Los rellenos son de vainilla con chocolate blanco y ganache de semillas de pistacho, fresa y relleno de mascarpone.
                       
                       


Sabiendo que la mezcla macarons es mejor con unas gotas de limón, y que yo SOY TERRIBLE haciendo los círculos redondos, hice una segunda ronda de macarons, pero compré una alfombra de silicona con círculos prediseñados .... y el resultado .... mucho mejor!




Esta vez los rellenos  fueron de ganache arándano cáscara de limón y chocolate blanco (macarrón amarillo), ganache de frambuesa y chocolate blanco (macaron verde), ganache de lavanda y chocolate blanco  (macaron púrpura). Estos tres eran deliciosos. El rojo tiene un relleno de ganache de chocolate negro y fresa, pero no nos gustó.



Y luego vinieron más macarons ..... esta vez con  ganache de chocolate blanco azafrán cardamomo ...... BUENISIMOS!


Y por supuesto.......mas macarons se hicieron (de izquiera a derecha)

Como todo en la vida.....No hay que dejarse intimidar por los desafios....la vida siempre nos pone pruebas y la cocina es uno mas....lo importante es superar los obstaculos!

Estos deliciosos pasteles estan hechos de ingredientes simples que todos conocemos: clara de huevos, almendras y azucar....Para mi ha sido un proceso de aprendizaje, y me he dado cuenta que la practica como todo en la vida, ha mejorado la tecnica y el resultado final es mejor.

Como en todo, hay que aprender de los errores, de las debilidades, y del ambiente que nos rodea. Antes de iniciar mi aprendizaje por los macarons, me lei 37 recetas de macarons ( la mayoria de blogs que sigo), y aun cuando muchas de ellas son diferentes, tenian  patrones similares.....

Como en  todo, una misma receta no sirve para todos ..... y tenemos que encontrar la receta que se adapte a nuestro horno, nuestra técnica y nuestros conocimientos .....

En el próximo post, voy a ir paso a paso por mis errores y logros en hacer estos macarons .....

Macarons....and More Macarons....(I)


Life comes with its challenges, but we are here to overcome them.  Nevertheless, to overcome our challenges, we have to know our weakness.....and I knew that I would need  to put in practice my research background to experiment with macarons....

My friend S. who is French told me two tips for making macarons. First, I need to sift the almond and sugar together at least three time......but....Why?....I needed to know the reason behind, and as you can see without sifting almond and sugar together you end up with macaron full of clumps of almonds and powdered sugar....In any case, they were delicious, but clumpy...

Second, I need a copper bowl for making the mix......but....Why?....I needed to know the reason behind the copper because I was not willing to buy an expensive bowl just to make macarons. There must be a reason....Thanks to Google I found the answer!...Egg whites are essentially proteins and water. Copper bowls have an ion which reacts with the protein of egg white, allowing the development of a stable foam and more voluminous. Would I buy a copper bowl just to make macarons? NO!....Therefore, I started to search for alternatives, and they exist. You can add two drops of lemon. or a pinch of cremor tartar in order to have the same effect as the copper bowls. Below, I made macarons with lemon drops (pink), and without lemon drops (white) and there is a difference in their height. In the green macaron, I wanted to try what happens if I put nuts on top.....not a good idea....!!

Although, my first round of macarons were not perfect, they were delicious and we ate them all! The fillings were white chocolate vanilla seeds ganache and pistachio, and mascarpone strawberry filling.

                       
                       


Knowing that the macarons mixture is better with some lemon drops, and that I am TERRIBLE at making round circles, I made a second round of macarons, but I bought a silicone mat with predesigned circles....and the result....much better!!




This time the fillings were blueberry lemon zest white chocolate ganache (yellow macaron), raspberry white chocolate ganache (green macaron),  lavender white chocolate ganache (purple macaron). These three were delicious. The red one has a filling of strawberry dark chocolate ganache, but we didn't like it.



And then.....came more macarons.....this time with saffron cardamom  white chocolate ganache ......SO GOOD!!


And of course....more macarons were made (from left to right)

Like everything in life ..... Do not be intimidated by its challenges ...life is always testing us and the kitchen is one test more .... the important thing is to overcome the obstacles!
These delicious pastries are made from simple ingredients that we all know: egg whites, almonds and sugar .... For me it has been a learning process, and I realized that with practice (like everything in life), the technique has improved and the end result is better.

As with anything, you have to learn from your mistakes, weaknesses, and the environment around us. Before starting my learning by macarons, I read 37 recipes macarons (most blogs I follow), and even though many of them are different, they had similar patterns .....

As everything, one size does not fit all.....and we have to find the recipe that fit our oven, our technique, and  our skills.....

In the next post, I will go step by step by my mistakes and achievements in doing these macarons.....
