Porcini Noodles in the Style of Stroganoff

One night, we were watching tv....very unusual to me since I don't like television....If I have time, then I prefer to cook or to read a book ....

There is a program called "Diners Drive ins and Dives" that goes to non expensive restaurants and feature a dish or two. In addition, they post the recipe...

We saw a dish called "Porcini Noodles in the Style of Stroganoff" and I couldn't sleep until making it. The next day, I went to buy what I needed, and I made my own version of it.....

Porcini Noodles in the Style of Stroganoff

I will post my version of it

Porcini pasta

3 cups of 00 flour
1 cup of semolina
5 eggs
3 tablespoons olive oil
water as needed
1/2 cup of porcini powder

Mix all dry ingredients first. Add the wet ingredients and mix together to make pasta dough. Roll it in a pasta machine until 6 (my machine is Marcato), and cut it in desire shape

Sauce

400 grams of wild fresh mushrooms
butter 
olive oil
1 shallot 
3 garlic cloves
3/4 cup of white wine (the original recipe use marsala but I don't have it)
3/4 cup creme fraiche
salt
pepper
arugula
goat cheese

In a pan, melt olive oil and butter. Add shallot and chopped garlic. Add the mushrooms and cook them until soft (6 minutes). Incorporate the wine, and let it simmer for 5 minutes. Add the creme fraiche, salt and pepper.

Mix the sauce with the cooked pasta. Serve the pasta, and on top put arugula and pieces of goat cheese.

The combination is delicious!!

  1. Homemade noodles tastes so FRESH and GOOD. Love that creamy mushroom sauce a lot.
