Apple "hat" cookies




I found this recipe in youtube, I made some modifications, and these little apple hats are delicious!!

Apple hats

For the apple filling:

3 apples grated

1 tablespoon of lemon juice

50 grams granulated sugar 

2 tablespoons of raisins

Half a teaspoon of cinnamon

3 tablespoons sliced almonds


For dough:

150 grams of yogurt 

1 egg

60 grams  sugar 

80  grams  butter

Zest of half a lemon

330 grams of flour plus some for dusting the dough

1 teaspoon of baking powder

For the filling. Mix all the ingredients and set aside.

For the dough: Cream the sugar and butter. Add the egg, lemon zest, and yogurt. Add the flour and baking powder. Combine until you have a soft no sticky dough. Let it rest for 30 minutes.

Divide the dough in 20 parts. Flatten them in circle shape. Made a cut in one radius of the circle. Place filling in a quarter of the circle. Roll them and close the bottom (watch the video) . 








Bake them at 350F for 20 minutes or until golden brown. They are delicious. ENJOY!
