Alfajor de Maizena and Sambusik........


Alfajor de Maizena
Sambusik (Date crescents)

I have make these sweets a while ago, and it is time to post them.... They are delicious, and the best complement for a cold winter day.....

Sambusik or Date Crescents(recipe adapted from Middle Easter Home Cooking

2 1/2 cups of all-purpose flour
1/2 teaspoon of mahlab (grinded) optional
1/4 cup of melted butter
1/3 cup of milk
1/4 cup of granulated sugar
1/4 cup of olive oil

Date filling
250 grams of pitted dates (chopped)
50 grams of butter
1 teaspoon of rosewater

In a small pan,heat warm and milk. Mix it until sugar is dissolved. Let it cool. Mix the flour and mahlab, and sift. Add melted butter, and mix it well. Pour the flour into the milk, add the oil and knead to make a doughj. Let it rest for 15 minutes.

To make the filling mix the chopped dates with butter, and mix it in a pan over medium heat until is combined. Add the rosewater.

Roll out the dough to a thickness of 5 mm. Cut circles, fill them with dates, and close them forming a crescent. 

Place them in a oven proof tray. In a preheated oven at 360F, cook them  for 25 minutes or until golden brown. ENJOY!




Alfajores de Maizena

300 grams of cornstarch
100 grams of flour
75 g sugar
1 tablespoon baking powder
125 grams of butter (cubes)
3 eggs
2 tablespoons of aguardiente
1 lemon zest
Dulce de leche
Coconut grated
Milk if needed

Mix the cornstarch, flour, sugar, and baking powder. Add butter, and mix it well until it is sandy. Add the eggs, rum, and lemon zest. Add milk if needed. Mix it well, and keep it in the fridge for 30 minutes.
Roll the dough until 5mm of thickness. Cut it in circles, and bake it in a preheated oven at 375F for 12 minutes, or until cooked. Fill it with dulce de leche, and pass it through grated coconut. ENJOY!
