Spinacci a la Romana and Trufles with Walnuts, Figs, and Candied Orange Peel



Time is flying!!....it seems that days are shorter to do whatever is needed!!...A friend told me that as we aged, life goes faster...I have to face the reality....I'm getting older!!

Here you have two delicious and fast to make recipes for this season.....

Spinacci a la Romana

1 kg of spinach leaves
2 tablespoons of raisins
2 tablespoons of pine nuts
3 cloves of garlic (chopped)
4 tablespoons of olive oil

Wash the spinach, and set aside. Chop them if you wish. Soak the raisins in cold water for 30 minutes. Drain it and set aside.

Heat the olive oil, add the garlic along with the pine nuts. Cook it for 1 minute. Add the spinach along with the raisins. Cook it for 5 minutes at medium heat. Season it with salt and pepper......ENJOY!!


Trufles with Walnuts, Figs, and Candied Orange Peel

150 gr. activated walnuts, drained and processed.
10 dried figs
2 tablespoons honey
1 teaspoon unsweetened cocoa
Candied orange peel
shredded coconut

Mix walnuts and figs in a food processor. Add honey and cocoa. We formed a circle with their hands, put a piece of candied orange peel, make a ball and go through the grated coconut ...... ENJOY!
