Canapes for Christmas and Tomato, Avocado and Shrimps Ceviche



My thoughts and prayers are with the families of Newtown, Connecticut.....May God bless and comfort them in this difficult time....

Inspired by Patricia that invited us ideas to prepare finger foods for Christmas, I decided to prepare for our first pre-Christmas dinner a variety of small canapes. In this case, I used a mini blini as a base because it is light, easy to make, and it doesn't get wet with the toppings.

Canapes for Christmas (Blinis, Cucumber, and Apple Base)

Mini blinis

2 eggs
salt
a pinch of baking powder
1 cup of milk
1 1/4 cup of flour (more or less depending on the desired thickness of the batter)
Olive oil

In a blender, put the eggs, salt, baking powder and milk. Beat it until well mix. Add the flour by 1/4 cup each time. I used almost 1 1/4 cup.  You can use more or less. The batter has to have a consistency of a thick pancake.

Brush with olive oil a pan, and heat it. Place the amount of batter desired depending on the size of the blini you wish. My size was 1 1/2 tablespoon of batter per blini. I ended up with 42 blinis.



Base:

50 grams of  Goat Cheese
150 grams of Greek Yogurt
Salt

Mix the goat cheese with the Greek yogurt, and add salt. It has to be thick. Spread a teaspoon on top of each blini and cucumber slice.


 You can put whatever you have in the fridge on top (ham, seafood, cheese, etc). My combinations were:

Blinis
Cheese and Mushroom sautee with herbs de Provence
Tomatoes and Mushroom sautee with herbs de Provence
Shrimps sautee with garlic and Italian herbs
Tomato, Avocado and Shrimps Ceviche

Cucumber
Avocado and Kalamata olives
Tomatoes and Kalama olives

Apple
Mix of Goat Cheese and Greek Yogurt with Walnuts







Tomato, Avocado and Shrimps Ceviche 

3 tomatoes
1 avocado
12 Shrimps
Garlic
Lemon
Salt
Olive oil
Green chives.

Sautee the shrimps with olive oil, salt and garlic.

Peel the tomatoes, and cut it in cubes. Peel the avocadoes, and cut it in cubes. Mix them, and add olive oil, chives, garlic, salt and lemon. Incorporate the shrimps. Leave it in the fridge for 1 hour to marinate the flavors. ENJOY!

  9. Aunque ya te he contestado en el blog vuelvo a hacerlo aqui por si no lo ves, la almendra que he puesto a las marquesitas es cruda sin pelar, por eso salen más oscurillas pero estan muy buenas.
    Aprovecho para desearte unas felices fiestas con tus seres queridos, aunque los tiempos estan mal trataremos de disfrutar de la compañia de los nuestros.
