Panecillos de Agua and Broccoli, Potatoes, Leek Ceam

 



During these cold days, the body asks for a warm soup or cream. I love the texture that leeks provide to any vegetable soup. This time, we enjoyed a good broccoli soup with a nice bread from Mandil

400 grams of frozen broccoli

60 grams of leek sliced (white part only)

2 garlic cloves chopped

1 onion chopped

20 grams of butter

30 grams of olive oil

2 potatoes peeled  in small pieces 

400 grams of milk

300 grams of water

1/2 teaspoon of turmeric

Pepper

Salt

Oregano


Melt the butter with olive oil in a pot. Fry the onion, garlic and leek for 5 minutes. Add the turmeric, salt, pepper,  and oregano. Add the potatoes along with the broccoli. Let it simmer for 3-5 minutes. Add the milk and water, and let it cook for 10 minutes or until the vegetables are done. Let it warm and blend it. Correct for salt and warm it up to serve. I baked these wonderful breads from Mandil....Panecillos de Agua.....they are very easy to make and delicious too. I used water from boiled potatoes. Potatoes gives a soft texture to breads.
