No...this is not a blueberry cheesecake.....it is a blue cabbage and goat cheese pie/quiche.
Easy and tasty.....surprisingly easy and healthy!
Blue Cabbage and Goat Cheese pie/quiche.
Dough
2 cups of flour
110 grams of butter
salt water as needed
Mix flour, butter and salt, until you have a sand consistency. Add water until you have a dough. Let it rest for 30 minutes in the fridge. With a roll pin, roll it and place it in a quiche mold. Bake it for 10-15 minute with a parchment paper on top and some beans. Take it out of the oven, and let it cool,
Filling
300 grams of blue cabbage cleaned and chopped
3 garlic cloves chopped
60 grams of leeks
1/2 glass of white wine (optional)
Olive oil
salt
oregano
3 eggs
1/4 cup of milk
160 grams of goat cheese
Heat the olive oil, and add the garlic and leeks. Add the blue cabbage, and cook it for 5 minutes. Add the white wine, and let it simmer until the alcohol evaporates. Season it with salt and oregano. Let it cool
Mix the eggs, milk, and goat cheese.
Once the pie crust is half cooked and cold, place the blue cabbage, and then the mix of eggs and goat cheese. Bake it at 170C for 25 minutes, or until is cooked. ENJOY!
Wonderful combo of flavours and colours! Wish I could persuade my husband to eat cheese and red cabbage...
