Kuku Sabzi and Fried Fish Persian Style with Saffron/White Basmati Rice.


Kuku Sabzi is a delicious Persian dish that it a kind of  "tortilla" or "omelet" made with green herbs. 


Kuku Sabzi

100 grams of  cilantro 
100 grams of parsley 
30 grams of mint
100 grams of  scallions
100 grams of  dill weeds
100 grams of  spinach 
100 grams of garlic chives 
6 eggs
½ to 1 tsp salt or to taste
1 tsp turmeric 
3 garlic cloves 
Olive oil 

Wash and chop all the herbs with the garlic. Mix it well. Season it with salt and turmeric. Beat the eggs until they are fluffy. Mix all together and fry it in a pan with olive oil (6 minutes per side). Serve it warm. ENJOY!






This is a recipe from a friend. It doesn't have a name since it is how is prepared at her home. It is delicious.

Fried Fish Persian Style

1/2 teaspoon of cinnamon
1/2 teaspoon of turmeric
1.2 teaspoon of coriander seeds
1/2 teaspoon of cumin seeds
5 garlic cloves
a pinch of saffron
juice of 1/2 to 1 lemon
olive oil
breadcrumbs

In a big mortar, grind all the spices together with the garlic cloves. Mix this paste with lemon juice and olive oil. Marinate piece of fish in this sauce for 3 hours in the fridge. Take the fish out of the fridge and cover both sides with breadcrumbs. I don't buy breadcrumbs, I use old bread that I grate it. Fry it in hot olive oil. Serve it with saffron/white basmati rice.












Saffron/White Basmati Rice

This rice is very simple. Cook white basmati rice per usual. Separate 1/4 of cooked basmati rice, and mix it with saffron water. Place the white basmati rice and on top the saffron rice. ENJOY!
