Havuç Tarator ....Turkish Carrot Dip
With hot and humid days, I'm making salads, paninis, and dips for dinner. This Turkish Carrot Dip won my heart. It is eaten as a mezze or salad. Since my herbs are in full production, I added some fresh herbs, and the result it was delicious!

Beetroot sourdough bread, Butterfly Pea Flower Tea sourdough bread and Panini
450 grams organic white bread flour
320 grams (approximately) of beetroot water
15 grams of salt
150 grams of sourdough 100 % hydration
450 grams organic white bread flour
310 grams of Butterfly Pea Flower Tea
15 grams of salt
150 grams of sourdough 100 % hydration

Natillas de azafrán
Saffron custard
3 eggs
250 grams of cream (35%)
400 grams of milk
90 grams of sugar
2 tablespoons of milk powder
30 grams of cornstarch
2 teaspoons of rose water
1/2 teaspoon of saffron threads plus some for garnish.
Crush the saffron with some sugar. Mix the sugar, milk, and saffron, and simmer it for 10 minutes at low temperature. Let it cool.
Mix the remaining ingredients except the rose water. Cook over medium low heat until thick. Turn off the stove, and add the rose water. Let it cool. Garnish with some saffron. ENJOY!
