Mushroom Basmati Fried Rice


We were celebrating Diwali last week, and I took the opportunity to try new dishes. I have to admit that I wasn't sure about the taste of this dish; however, once I tried it, I'm completely in love with it. It is easy to make, tasty, and full of flavors.

Ingredients
600 grams Basmati rice cooked and cool
400 grams of Mushrooms washed and sliced
1 tsp mustard seeds
4 tbsp of Olive oil 
6 Garlic cloves
2 stems of fresh Curry Leaves 
2 chopped Onion in julienne
2 tbsp Tomato Paste  
1/2 tsp Turmeric Powder 
1 tsp Red Chilli Powder or more
1 tsp Coriander Powder 
1 tsp Cumin Powder
2 tsp Garam Masala
1/2 cup of  Coriander Leaves chopped
1 tbsp Ghee 
Salt  to taste 

In a big pan add 2 tbsp olive oil, and heat it. Add the mustards, and when they start to sound, lower the heat, and add garlic and curry leaves. Then add the onions, and sautee them until they are brown. Set aside. In the same pan, add the remaining olive oil, and sautee the mushrooms for about 7 minutes until they are brown. Add tomato paste, and all spices. Let it simmer for 3 minutes. Then, add the rice, ghee, coriander chopped, the fried onions-garlic-curry leaves, and salt. Fry them for 3-4 minutes. Serve it warm.   1. A perfect side dish! My husband doesn't eat WHITE rice, it has to be coloured..so this is another one ideal for him.

  2. We have everything in the house except for the fresh coriander, but I will remedy that this afternoon and we will make this dish tonight.
