Lucuma frozen dessert....






 I don't know how to name this dessert, but it is a dessert that we love to eat. We love lucuma, which is a fruit with a taste of caramel....I don't know how to describe it....you just have to taste it

Lucuma frozen dessert with vanilla cream

I buy here a lucuma puree that it comes from South America. The brand is Guallarauco, and the weight is 400 grams

Lucuma frozen dessert
1 pot of Guallarauco lucuma puree
9 sheets of gelatine
50 grams of water
100 grams of milk
450 grams of whipping cream
2 eggs
225 grams of mascarpone or cream cheese

Vanilla Sauce
2 eggs
2 tablespoons of sugar
2 tablespoon of corn starch
2 teaspoons of vanilla essence
2 cups of milk

Soak 3 gelatine sheets in 50 grams of water. Heat it to dissolve it. Mix it with 150 grams of lucuma puree. Place it in round silicone molds, and freeze them.



In a sale store, I bought this Silikomart molds for 2 euros!.....I know....incredible....no one knows them here; therefore, nobody buys them...except me....

Soak 6 gelatin sheets in cold water. 
Mix 100 grams of milk, 100 grams of whipping cream, and 2 eggs. Make a custard, and add the gelatin sheets, let it cool. Once it is cold, mix it with the remaining lucuma puree, and the mascarpone cheese. Whipp the remaining whipping cream, and mix it with the lucuma custard. Place the lucuma custard in a Silikomart mold, and insert the previously frozen lucuma jelly. Freeze it for a minimum of 8 hours.

Make a vanilla sauce, and place it in the fridge.

Take the frozen dessert out of the freezer, and place them over a plate that has vanilla sauce. Let it defrost in the fridge for 1 hour or 30 minutes at room temperature.
