Dumplings Coreanos de Kimchi y Camarones

 

¡Nos encantan los dumplings! ... y nos encanta el estilo coreano, relleno de kimchi o gambas

Masa para dumplings

230 g de agua
450 g de harina para todo uso

Calentar el agua hasta 80C. Sácalo del fuego y colócalo en un recipiente resistente al calor. Agrega la harina. Con una cuchara de madera, mézclalo. Luego mézclalo con las manos hasta que tengas una masa suave. Cuidado porque esta muy caliente. Envuélvelo con un paño de cocina y déjalo reposar durante 30 minutos.

Con una máquina para hacer pasta o un uslero para amasar, aplanar la masa hasta 3 mm. En una máquina, es el número 5. Cortar pequeños círculos de masa.

Relleno de camarones

5 g de jengibre fresco de raíz finamente picado
7 cebolletas verdes en rodajas (3 mm)
200g de langostinos crudos medianos pelados
1 cucharada de aceite de sésamo tostado
2 cucharadas de vinagre de arroz
2 cucharadas de salsa de soja

En un procesador de alimentos, coloca todos los ingredientes y mézclalos por 1 minuto. Dejar de lado

Relleno de kimchi

3/4 taza de kimchi picado
70 gramos de fideos de arroz
2 papas hervidas trituradas
6 champiñones picados y salteados.

Cocina los fideos de arroz según las instrucciones y reserva. Con un cuchillo picarlos y mezclarlo con el puré de patatas y los champiñones. Agrega el kimchi y combínalos bien.

En un círculo de masa, coloque 1 1/2 cucharadita de relleno. Selle la bola de masa y cocínela en una vaporera durante 4 minutos por cada lado. Sacarlos y sofreírlos con un poco de aceite de oliva. ¡DISFRUTAR!


 






 

Sunday....Dumpling's day....Kimchi dumplings and Prawns dumplings


We love dumplings!....and we love the Korean way, filled with Kimchi or Prawns

Dumpling wrappers 

230 g water 
450g all-purpose flour

Heat the water until 80C. Take it out of the stove, and place it in a heat resistant bowl. Add the flour. With a wooden spoon, mix it. Then mix it with hands until you have a soft dough. Be careful because is very hot. Wrap it with a kitchen towel, and let it rest for 30 minutes. 

With a pasta machine or rolling pan, flatten the dough up to 3 mm. In a machine, is number 5. Cut small circles of dough.

Shrimp filling

5g fresh root ginger finely chopped
7 chives sliced (3 mm)
200g medium raw prawns peeled
1 tablespoon toasted sesame oil 
2 tablespoons rice wine 
2 tablespoons soy sauce 

In a food processor, place all the ingredients and mix them for 1 minute. Set aside 

Kimchi filling

3/4 cup of kimchi chopped
70 grams of rice noodles
2 boiled potatoes mashed
6 mushrooms chopped and stir fried.

Cook the rice noodles according to instructions and set aside. With a knife chop them, and mix it with the mashed potatoes, and the mushrooms. Add the kimchi, and combined them well.

In a dough circle, place 1 1/2 teaspoon of filling. Seal the dumpling, and cook it in a steamer for 4 minutes each side. Take them out, and stir fry with a little of olive oil. ENJOY!

Salmon con salsa de alcaparras y limon



 

No se que ha pasado, pero el tiempo ha volado!! .... ahora, volvamos a la cocina.

No como mucho pescado, pero encontré un salmón salvaje y fresco, y probe esta receta (no recuerdo donde la vi). Nos encanto y la repetí!!


Salmón con alcaparras y limón

4 piezas de salmón

1 cucharada de mantequilla

2 cucharadas de aceite de oliva

2 cucharadas de alcaparras (1/2 cucharada de alcaparras por pieza de salmón o a gusto)

1 chalota picada

2 ajos picados

Jugo de 1 limón

1 limón en rodajas

sal

pimienta

4 cucharadas de harina

1 copa de cava, vino blanco o caldo de verduras


Limpiar el salmón. Coloca la harina en un plato. Cubre el salmón con harina por ambos lados. En una sartén, derrita la mantequilla y agregue el aceite de oliva. Dorar el salmón 2 minutos por cada lado. Sacar el salmón. En la misma sartén (puede agregar más aceite de oliva y/o mantequilla), sofreír las chalotas y el ajo, y agregar la harina restante. Agrega la copa de cava, y deja que la harina se disuelva hasta obtener una salsa cremosa fina. Agrega el jugo de limón y las alcaparras. Revuélvelo con frecuencia. Agregue una rodaja de limón por harina y cubra la sartén durante 1 minuto. Sacar las rodajas de limón, colocar los trozos de salmón, colocar la rodaja de limón encima del salmón. Déjalo cocer a fuego lento durante 7 minutos o hasta que esté bien cocido. ¡DISFRUTAR!





Salmon with capers and lemon sauce




 

It has been very busy time....now, let's go back to the kitchen.

I don't eat much fish, but I found a wild and fresh salmon, and I make this recipe. It was so good that I repeated i!!


Salmon with capers and lemon

4 pieces of salmon

1 tablespoon of butter

2 tablespoons of olive oil

2 tablespoons of capers (1/2 tablespoon of caper per piece of salmon)

1 shallot chopped

2 garlics chopped

Juice of 1 lemon

1 lemon in slices

salt

pepper

4 tablespoons of flour

1 glass of cava, white whine, or vegetable stock


Clean the salmon. Place the flour on a plate. Cover the salmon with flour on both sides. In a pan, melt the butter and add the olive oil. Sear the salmon 2 minutes each side. Take apart the salmon. In the same pan (you may add more olive oil and or butter),  fry the shallots and garlic, and add the remaining flour. Add the glass of cava, and let the flour dissolve until you have a thin creamy sauce. Add the lemon juice, and the capers. Stir it often. Add one lemon slice per flour and cover the pan for 1 minute. Take the lemon slices out, place the salmon pieces, place the lemon slice on top of the salmon. Let it cook at low heat for 7 minutes or until it is properly cooked. ENJOY!

Pizza con tapa

  


No sé cómo titular esta receta ... por eso puse este título. Esta es una de las últimas recetas que hice antes de mudarme a este país, y la encontré organizando mis fotos durante este fin de semana. Sé que lo vi en un blog o canal de youtube, ¡¡pero fue hace más de 2 años !! ... Mis disculpas, pero no recuerdo la fuente .....


Este fin de semana lo hicimos de nuevo ... ¡y estuvo delicioso!


Pizza con tapa

masa para pizza

10 papas pequeñas o medianas

Queso Mozzarella

Havarti

2 cebollas

sal

Pimentón de la vera

Orégano fresco


Cortar las patatas en rodajas muy finas y sofreírlas. Dejar de lado. Cortar las cebollas muy finas y sofreírlas. Dejar de lado.

Haga su masa de pizza como de costumbre. Hice 2 piezas de 450 gramos cada una

Con un uslero, haz un rectángulo. Unte con aceite de oliva. Distribuya un poco de orégano fresco si lo tiene. Distribuir rodajas de queso mozzarella, luego esparcir las cebollas fritas, luego poner una capa de un poco de queso (en mi caso havarti), luego agregar encima 2/3 de las papas fritas. Espolvorear con sal y pimentón de la vera. Cubrir con la otra mitad de la masa de pizza. Sellarlo con un tenedor. Unte con aceite de oliva y distribuya las patatas restantes encima de la masa. Hornee en un horno precalentado a 375F durante 20-25 minutos o hasta que esté dorado. DISFRUTAR

I don't know how to title this recipe.....that is the reason I put this title. This is one of the last recipes I made before moving to this country, and I found it organizing my pictures during this weekend. I know I saw it in a blog or youtube channel, but it was more than 2 years ago!!.....My apologies, but I can't remember the source of it.....

This weekend, we made it again....and it was delicious!!

Pizza dough

10 small or medium size potatoes

Mozzarella

Havarti

2 onions 

Salt

Pimenton de la vera

Fresh oregano


Slice the potatoes very fine, and stir fry them. Set aside. Slice the onions very fine, and stir fry them. Set aside.

Make your pizza dough as usual. I weight 2 pieces of 450 grams each

With a roll pin, make a rectangle. Brush it with with olive oil. Spread some fresh oregano if you have. Distribute slices of mozzarella cheese, then spread the fried onions, then put a layer of some cheese (in my case havarti), then add on top 2/3 of the fried potatoes. Sprinkle with salt and pimenton de la vera. cover with the other half of the pizza dough. Seal it with a fork. Brush it with olive oil, and distribute the remaining potatoes. Bake it in a preheated oven at 375F for 20-25 minutes or until golden brown. ENJOY

Arroces de colores....Inspirada en Tailandia

 

Me encanta Tailandia ... es uno de los lugares en los que me siento en casa ... sí ... es extraño ... Me siento como en casa en muchos países, y Tailandia es uno de ellos.

En algunos restaurantes de Tailandia te sirven arroces de diferentes colores. Por lo general, usan tinta vegetal. Es famoso su arroz azul elaborado con la tinta de una flor. Además, tienen arroz rojo tailandés que no es una variedad de arroz jazmín.

Inspirada en la comida que comía en mis viajes, y con ganas de ir pronto ... hice coloridos arroces para servir con curry tailandés .....

Hicimos siete arroces ...


Arroz blanco: 1 taza de arroz jazmín 2 tazas de agua sal. Lava el arroz, mézclalo con agua. Hervir y cocinar hasta que esté tierno.


Arroz negro: es un arroz negro (sin color añadido) de Corea. 1 taza de arroz (muy bien remojado durante al menos 6 horas) 2 tazas de agua con sal. Lava el arroz, mézclalo con agua. Hervir y cocinar hasta que esté tierno.


Arroz rojo: Es un arroz rojo (sin color añadido) de Tailandia. 1 taza de arroz 2 tazas de agua sal. Lava el arroz, mézclalo con agua. Hervir y cocinar hasta que esté tierno.


Arroz amarillo claro: 1 taza de arroz 2 tazas de agua sal y algunas hebras de azafrán. Lavar el arroz, mezclarlo con agua, agregar la sal y el azafrán triturado. Hervir y cocinar hasta que esté tierno.


Arroz amarillo oscuro: 1 taza de arroz 2 tazas de agua sal y 1 cucharadita de cúrcuma. Lavar el arroz, mezclarlo con agua, agregar la sal y la cúrcuma. Hervir y cocinar hasta que esté tierno.


Arroz verde: 1 taza de arroz 2 tazas de agua sal y 2 dientes de ajo y 1/2 manojo de cilantro. Lava el arroz. En una licuadora, mezcle el ajo, el cilantro y el agua, y mezcle bien. Agrega al arroz junto con la sal. Hervir y cocinar hasta que esté tierno.


Arroz azul: en Tailandia, usan la flor de guisante de mariposa para hacer arroz azul. En su lugar, usé repollo morado. Primero, prepararemos el agua azul. En una olla, coloque aproximadamente 2 tazas de col azul picada con 2.5 tazas de agua. Hervir a fuego medio bajo durante 6 minutos. Tenga cuidado de no quemar el repollo. Colar el repollo y reservar el agua. Deberías terminar con un poco más de 2 tazas de agua azul. agregue una pizca de bicarbonato de sodio. ¡¡SÓLO UN Pellizco !! Demasiado bicarbonato de sodio hará que el agua sea verde (turquesa) en lugar de azul. Mezcle 1 taza de arroz con 2 tazas de agua azul sal. Hervir y cocinar hasta que esté tierno. Este arroz no sabe a repollo. ¡DISFRUTAR!








Colorful rices....inspired in Thailand

I love Thailand....it is one of the places that I feel home....yes....it's weird....I feel home in a lot of countries, and Thailand is one of them.

In some restaurants in Thailand, they serve you different colored rices. Usually, they use vegetable ink. It is famous their blue rice made with the ink of a flower. Also, they have red Thai rice that it is not a variety of jazmin rice.

Inspired in the food I ate in my trips, and wanting to go there soon....I made colorful rices to serve with Thai curries.....

We made seven rices...

White rice: 1 cup jazmin rice 2 cups of water salt. Wash the rice, mix it with water. Boil it and and cook it until tender.

Black rice: It is a black rice (no color added) from Korea.  1 cup  rice (preciously soaked for 6 hours at least) 2 cups of water salt. Wash the rice, mix it with water. Boil it and and cook it until tender.

Red rice:  It is a red rice (no color added) from Thailand.  1 cup  rice 2 cups of water salt. Wash the rice, mix it with water. Boil it and and cook it until tender.

Light yellow rice:  1 cup  rice 2 cups of water salt and few strands of saffron. Wash the rice, mix it with water, add the salt and crushed saffron. Boil it and and cook it until tender.

Dark yellow rice:  1 cup  rice 2 cups of water salt and 1 teaspoon of turmeric. Wash the rice, mix it with water, add the salt and the turmeric. Boil it and and cook it until tender.

Green rice:  1 cup  rice 2 cups of water salt and 2 garlic cloves and 1/2 bunch of cilantro. Wash the rice. In a blender, mix the garlic, cilantro and  water, and blend it well. Add to the rice along with the salt. Boil it and and cook it until tender.

Blue rice:  In Thailand, they use Butterfly-pea flower to make blue rice. I used purple cabbage instead. First, we will prepare the blue water. In a pot, place about 2 cups of chopped blue cabbage with 2.5 cups of water. Boil it at medium low heat for 6 minutes. Be careful not to burn the cabbage. Strain the cabbage and reserve the water. You should end up with a little bit more than 2 cups of blue water. add a pinch of baking soda. ONLY A PINCH!! too much baking soda will make the water green (turquoise) instead of blue. Mix 1 cup  of rice with 2 cups of blue water water salt. Boil it and and cook it until tender. This rice doesn't taste like cabbage. ENJOY!

Malai Kofta

  


Este es un platillo que siempre como en un restaurante ya que no sabía cómo hacerlo ..... Ahora lo haré en casa ..... no solo es fácil, sino delicioso !!


Malai Kofta


Salsa amarilla

2 cucharadas de pipas de girasol

40 anacardos

2 tazas de agua


Curry

3 cucharadas de ghee

3 vainas de cardamomo

2 clavos de olor

1 hoja de laurel

2 cebollas picadas

1 cucharadita de sal

2 dientes de ajo y un trozo de jengibre para hacer pasta de ajo y jengibre

1 tomate picado

1 cucharadita de cilantro en polvo

1 cucharadita de chile rojo en polvo

1 cucharadita de Garam Masala

1 cucharada de cilantro fresco picado

1 cucharadita de cúrcuma

1/2 taza de yogur

1/2 taza de agua


Kofta

200 grama paneer rallado

3 papas medianas hervidas y machacadas

1 cucharadita de alholva

1 cucharadita de cilantro fresco picado

1 cucharadita de sal

1/2 cucharadita de chile kasmiri en polvo

1 cucharadita de cúrcuma

4 cucharadas o más de maicena

Aceite para freír


Remojar las semillas de girasol y el anacardo durante una hora. Déjalo hervir durante 10 minutos. Déjalo enfriar y licúa hasta que quede una pasta espesa. Dejar de lado.

En una olla, caliente el ghee y agregue el cardamomo, el clavo y la hoja de laurel. Sofreír las cebollas y la pasta de ajo y cebolla. Incorporar el cilantro en polvo, el chile rojo en polvo, Garam Masala y la cúrcuma. Deja que extraiga los sabores durante 2 minutos. Incorporar la pasta de anacardos, el yogur y el agua. Déjalo cocinar por 3 minutos. Incorpora los tomates picados. Déjalo cocer durante 6 minutos.

En una bandeja, mezclar el paneer rallado con el puré de patatas. Agrega las especias y la sal. Haga bolitas y cúbralas con maicena. Fríelos hasta que estén dorados.




Del curry, saca la hoja de laurel, el cardamomo y el clavo. Licúa hasta obtener una pasta homogénea. Calientalo. Coloca 2 bolitas de Kofta en un plato y cúbrelas con salsa ..... sírvelas con arroz basmati .... ¡DISFRUTA!

This is a dish that I always eat in a restaurant since I did't know how to do it.....Now, I will make it at home.....not only is easy, but delicious!!


Malai Kofta

Yellow sauce

2 tablespoons sunflower seeds

40 Cashews

2 cups of  water 


Curry

3 tablespoons of ghee

3 Cardamom pods

2 cloves

1 bay leaf

2 onions chopped

1 teaspoon salt

2 garlic cloves and a piece of ginger to make  ginger garlic paste

1  tomatoe chopped

1 teaspoon coriander powder

1 teaspoon red chili powder

1 teaspoon Garam Masala

1 tablespoon chopped fresh coriander

1 teaspoon Turmeric

1/2 cup yogurt

1/2 cup of water


Kofta


200 grama paneer grated

3 medium size potatoes boiled and mashed

1 teaspoon alholva 

1 teaspoon chopped fresh coriander

1 teaspoon of salt

1/2 teaspoon of kasmiri chili powder

1 teaspoon turmeric

4 tablespoons or more of cornstarch

Oil for frying


Soak the sunflower seeds and cashew for one hour. Let it boil for 10 minutes. Let it cool and in a blender blend them to make a thick paste. Set aside.


In a pot, heat the ghee, and add the cardamom, cloves, and bay leaf. Sautee the onions and garlic onion paste. Incorporate the coriander powder, red chili powder, Garam Masala and turmeric. Let it extract the flavors for 2 minutes.  Incorporate the cashew paste, the yogurt and water. Let it cook for 3 minutes. Incorporate the chopped tomatoes. Let it cook for 6 minutes.


On a tray, mix the grated paneer with the mashed potatoes. Add the spices and salt. Make balls, and coat them with cornstarch. Fry them until golden brown.




From the curry, the the bay leaf, cardamoms, and cloves out. Blend it until you have a smooth paste. Warm it. Place 2 balls of Kofta in a plate and coat them with sauce.....serve it with basmati rice....ENJOY!
