Colorful rices....inspired in Thailand

I love Thailand....it is one of the places that I feel home....yes....it's weird....I feel home in a lot of countries, and Thailand is one of them.

In some restaurants in Thailand, they serve you different colored rices. Usually, they use vegetable ink. It is famous their blue rice made with the ink of a flower. Also, they have red Thai rice that it is not a variety of jazmin rice.

Inspired in the food I ate in my trips, and wanting to go there soon....I made colorful rices to serve with Thai curries.....

We made seven rices...

White rice: 1 cup jazmin rice 2 cups of water salt. Wash the rice, mix it with water. Boil it and and cook it until tender.

Black rice: It is a black rice (no color added) from Korea.  1 cup  rice (preciously soaked for 6 hours at least) 2 cups of water salt. Wash the rice, mix it with water. Boil it and and cook it until tender.

Red rice:  It is a red rice (no color added) from Thailand.  1 cup  rice 2 cups of water salt. Wash the rice, mix it with water. Boil it and and cook it until tender.

Light yellow rice:  1 cup  rice 2 cups of water salt and few strands of saffron. Wash the rice, mix it with water, add the salt and crushed saffron. Boil it and and cook it until tender.

Dark yellow rice:  1 cup  rice 2 cups of water salt and 1 teaspoon of turmeric. Wash the rice, mix it with water, add the salt and the turmeric. Boil it and and cook it until tender.

Green rice:  1 cup  rice 2 cups of water salt and 2 garlic cloves and 1/2 bunch of cilantro. Wash the rice. In a blender, mix the garlic, cilantro and  water, and blend it well. Add to the rice along with the salt. Boil it and and cook it until tender.

Blue rice:  In Thailand, they use Butterfly-pea flower to make blue rice. I used purple cabbage instead. First, we will prepare the blue water. In a pot, place about 2 cups of chopped blue cabbage with 2.5 cups of water. Boil it at medium low heat for 6 minutes. Be careful not to burn the cabbage. Strain the cabbage and reserve the water. You should end up with a little bit more than 2 cups of blue water. add a pinch of baking soda. ONLY A PINCH!! too much baking soda will make the water green (turquoise) instead of blue. Mix 1 cup  of rice with 2 cups of blue water water salt. Boil it and and cook it until tender. This rice doesn't taste like cabbage. ENJOY!
