Carrot, Cardamom, and Walnuts Cake with Mascarpone Cheese

Mmmmmm.......Cardamom...I really like to cook with this spice. For me, cardamom is aromatic, unique in taste, and acording to Ayurvedic medicine is a digestive spice. If I find a recipe that has cardamom in it, then I must try it.
For me, this is a new version of the typical carrot cake, but with two ingredients that I like a lot: cardamom and mascarpone cheese.

For the Cake:
1 1/2 cup of all purpose flour
1/2 cup corn starch
2 teaspoons of baking powder
100 grams of butter
3/4 cup of brown sugar
2 eggs
2 carrots grated
1/2 cup chopped walnuts
1 orange zest
5 cardamoms seed crushed
Milk
Nutmeg grated
Juice of 1 orange

For the filling/frosting
250 grams of mascarpone cheese
1/2 cup of whipping cream
40 grams of icing sugar
1 orange zest
Juice of 1 orange

For the cake
Sift the flour, baking powder and nutmeg. In another bowl, mix the butter, sugar and orange zest. Add the eggs, and beat it until is fluffy. Fold in the flour mixture, crashed cardamoms,  grated carrots, and walnuts. Bake in a preheated oven at 380F for 25 minutes, or until properly cooked.

Let it cool, and split the cake in half. Sprinkle the orange juice in the inner part of both layers of the cake.


For the filling
Mix the whipping cream with icing sugar until starts to thicken. Fold the mascarpone cheese, orange zest and orange juice. Divide this frost in two portions. One goes in between the layers of the cake, the other half on top. Put in in the fridge for two hours. Enjoy!!!
