Three color ravioli



I love pasta....my Italian roots force me to eat pasta at least once a week....

I made this tricolor pasta and I loved it....

Plain color pasta

3/4 cup flour 00
1/4 cup semolina
2 eggs
1 teaspoon olive oil
water if needed

mix all the ingredients until you have a pasta dough. Wrap it in plastic wrap

Green color pasta

3/4 cup flour 00
1/4 cup semolina
2 eggs
1 teaspoon olive oil
water if needed
200 grams fresh spinach

Cook the spinach, and take all the water out. Blend it in a blender with the eggs. Mix all the ingredients until you have a pasta dough. Wrap it in plastic wrap


Plain color pasta

3/4 cup flour 00
1/4 cup semolina
2 eggs
1 teaspoon olive oil
water if needed
3 tablespoon tomato paste

mix all the ingredients until you have a pasta dough. Wrap it in plastic wrap

Filling

I always my filling by "smell" I know how it has to smell the combination of garlic, oregano, ricotta, parmiggiano cheese and spinach

300 grams of fresh spinach
3 garlic cloves
1 teaspoon of oregano
2 tablespoon of ricotta
parmiggiano as needed
1 egg

Cook the spinach. Squeeze it to take all the water out. Mix it with the other ingredients. Add parmiggiano as needed (it has to be a dry mixture)

Make your ravioli by hand or machine. One of my friends use a ice cub tray to form the ravioli. 





Boil it until fully cooked....Enjoy!
