The last couple of years, I saw a brie in a puff pastry as appetizer for Christmas season. I had some puff pastry that I made for pasteis de belem, and I wanted to give it a try......I must confess.....it is delicious!
Puff pastry
120 grams of flour
120 grams of diced very cold butter
60 grams of water
a pinch of salt
Mix all together, let it rest for 1 hour in the fridge. Then, with a roll pin fold it in "book" style. You have to do it once every hour, in total 4 times or hours.
Caramelize 1 onion. Place a brie on the puff pastry. On top of the brie, place the caramelized onions and a branch of fresh rosemary. You can use oregano, a bay leaf, or a sage leaf. Close it, and brush it with egg. Bake it at 375F until golden brown. Serve it warm. Enjoy!

It is delicious!. I adapted a little bit
Bread with vegetables (It is more like a pancake)
1 eggs
pinch of salt
1 tablespoon of granulated sugar
1/2 tablespoon of sourdough (optional)
1 tablespoon of dry yeast
3/4 cup of warm milk
3/4 cup of warm water
2 cups flour
dry herbs
bell peppers
garlic
2 medium potatoes grated (raw)
1 leek sautee and chopped.
50 grams of ricotta
50 grams of parmesan cheese grated
oil for frying
Sautee all the vegetables 3 minutes. They have to be middle cooked.
Mix the milk, sugar and yeast until is foamy (10 minutes). Mix the foamy yeast with the flour, egg, and the water. Add slowly the water until you have a mix like a batter for pancakes. Let it rise for 1 hour. Add all the veggies, and the cheese. Fry them in small batches. Enjoy!
Both yeast vegetable pancake and baked Brie are very delicious, but I love esp. the Brie.
