Samosas



I love samosa, and I have never made them before.....this is not going to be the last time!!

Samosa

dough
2 cups   flour  
1 tsp Salt                          
1 tsp Carom seeds        
5 tsp oil         
140 ml water                       

Mix all the ingredients and knead for 6 minutes or until you have a soft dough. Adjust for water. Let it rest covered for at least 30 minutes but not more than 1 hour.

Filling
650 grams boiled potatoes   in pieces
3 tbsp  oil             
3 Garlic chopped
1 piece ginger chopped 2.5 cm
2 tsp cumin seeds 
1/2 teaspoon or more of turmeric
pepper 
1/2 cup of green peas                     
2 green chilies  chopped
2 onion chopped
1 tsp nigella seeds            
salt                           
1 1/2 tsp red chili powder       
1 1/2 tsp red chili flakes           
1/2 lemon juice               
1 tsp coriander powder 
4 tbsp of water   

Heat the oil, and add the onion, garlic, ginger, and cumin. Let it cook for 5 minutes. Add the water, and the rest of the spices. Add the potatoes and the green peas Let it cook for 6 minutes to infuse the spices. Let it cool. 

Divide the dough in 10-12 pieces. Make a circle with a roll pin, and dived it in two pieces. Make a cone, and fill it with the potatoes filling. Fried them in hot oil and serve with cilantro-mint chutney. ENJOY!
