Time is flying!....I have been making jams....I used to buy them, but they are very sweet, and I don't know the quality of the ingredients. Now, I found my own proportion of sugar. They are not made to be stored in the pantry because I use a small amount of sugar; thus, I freeze them.
Jam
1 kg of fruit (peaches, apricots or strawberry)
300 grams of sugar
1 teaspoon of vanilla essence
Wash and cut the fruit as your desired size. Place it in a bowl with the sugar, and leave it at least for 24 hours in the fridge. Thus, you will extract the natural sugar content of the fruit. Simmer/boil it for 1 hour. Let it cool, and place it in plastic bags (ziploc style). Freeze them. I use them for breakfast, cakes and home made ice cream. ENJOY!
1kg of fruit with just 300g of sugar...that's a very reasonable ratio to me. I can't stand the storebought one...to darn sweet and like what you said I too worry about the quality of ingredients. Homemade all the way!
