Viennessoire filled with creme patisserie and peach jam







I love viennessoire pastries in all form and shapes....However, for making them you need a good set of muscles....
I found in youtube a very easy and fast way to make them....The result? fantastic....my house smelled like in a good European, Asian or Latin American pastry shop.....

Puff pastry

100 grams of butter
1.5 teaspoon of salt
500 grams of flour
250 grams of butter
200 grams of water


Mix butter and salt until they are soft. Add the flour and water. Kneed it well and let it rest for 30 minutes. Kneed it again for 2-3 minutes, and divide it in four pieces. Cover it with plastic wrap.

Divide 250 grams of butter in 4. Flatten one piece of dough, and place a piece of butter. Close it in a ball shape, and flatten it with a rollin pin. Roll the dough by the shortest side. You can see the picture below.



Take one piece, flatten it in a rectangle shape, and fold it in four. This means place each end to the middle, and then fold it by half. Then you haver the four sides. Now, the dough is ready!!

Take each piece, and with a roll pin flatten it until you have 4 mm thickness. Divide each piece in 9 squares. Make the shape you like, and fill it with the sweetness of your choice. In my case I used home made peaches jam and vanilla custard cream. ENJOY!!

The result is fantastic!!
