I had some mushrooms in the fridge that were saying....EAT ME!!...
Also, I had some frozen cheeses that I wanted to use....and here we have....it ends up to be a delicious, creamy and soft dish.....you can eat it warm or cold:
Mushroom and zucchini with cheeses
350 grams mushrooms
1 big zucchini grated
200 grams mozzarella
100 grams havarti cheese
250 grams cottage cheese
50 grams grated parmesan
2 teaspoon fresh oregano
1/2 teaspoon fresh rosemary
3 garlic cloves chopped.
Wash and sliced the mushrooms. Wash and grate the zucchini. In a pan with olive oil, stir fry them together. Season it with salt and herbs. Set aside.
In a blender, place all the cheeses along with the eggs and the garlic. Mix them well, and combine it with the zucchini and mushrooms mixture. Place it in an oven proof tray, and bake it at 360F for 25 minutes or until it is done. ENJOY!!
