Coconut cream dessert with strawberries, blueberries and peaches





Since I had guests with special diets, I had to find desserts that were low in carbohydrate.

I tried this recipe, and it was so simple and so good!! I will start to making for us with different toppings.

Coconut cream dessert with strawberries, blueberries and peaches

1 can of coconut milk cream
400 grams of whipping cream 
1 teaspoon of vanilla
1 pinch of salt
4 tablespoons of monkfruit or any sugar substitute of your choice. You can add more.
5 leaves of gelatin

Place the gelatin leaves in cold water. Set aside.

In a pot, mix the coconut milk with cream milk, vanilla, monkfruit, and salt. Simmer it, at low temperature, for 5 minutes. Add the gelatin and let it dissolve. Distribute the mixture in small glasses. Place it in the fridge for 3 hours.

Toppings

I used the same recipe and proportion for the three fruits. 

1 1/2 cup of fruit. I used frozen strawberries, and frozen blueberries. I used fresh peaches.
1 teaspoon of lemon
1 teaspoon of vanilla
3 tablespoon of monkfruit or any sugar substitute of your choice. You can add more.
1 pinch of salt.

Place the fruit along with the lemon, vanilla, and salt. Let it simmer for 5 minutes. Cook it until it reduces it to 3/4. Let it cool. Place it in a blender with monkfruit. Put in a container in the fridge. At the moment of serving, place 2 teaspoons of the fruit compote on top of each coconut cream dessert. ENJOY!!
