Lasagna

 


No time for fancy pictures because I was decorating  Christmas Cookies, when my family was asking for home made lasagna.

It has been very cold, and to eat this dish in a cold winter day was very comforting.

Home Made Lasagna

Sauce

2 bottles of tomato passata 

1 stick of cinnamon

3 cloves 

3 bay leaves

3 garlic cloves chopped

2 teaspoon of fresh oregano chopped

1 teaspoon fresh rosemary chopped

1 teaspoon of salt

Olive oil

Water

In a pot, heat olive oil, and add the cinnamon, cloves, bay leaves, and garlic. Simmer it for 2-3 minutes for the spices to release the aroma. Add the bottles of tomato passata, and add 1 cup of water. Add the oregano, rosemary, and salt. Simmer it until it reduces to 3/4 of its original level.

Dough

1 1/2 cup of 00 flour

1/2 cup of semolina

3 eggs

2 tbsp of olive oil

water as needed

Filling

Lots of cheese. I used Havarti for the filling, and parmiggiano for the topping.

Mix the flour and semolina. Add the eggs, olive oil, and water as needed. Kneed it until you end up having a soft and dry dough. Pass it through a pasta machine until #6. Cut them in rectangles that fit your pot and baking tray.

In a pot with hot water, cook the pieces of pasta until they are "al dente" that is 2-3 minutes with fresh pasta. Transfer the pieces of pasta to a bowl with cold water. In a baking tray, assemble the lasagna. First sauce, then cooked dough, then cheese, then sauce. Repeat until your baking tray is 3/4 full in height. Bake it for 30 minutes at 375F. In the last 5 minutes, add parmiggiano on top. Let itr rest in the oven for 30 minutes. ENJOY!
