Vegetarian Turkey


We're almost in Christmas, and I continue with Thanksgiving recipes!....Time flies!!


I know it sounds strange....vegetarian turkey...but I prepared this dish for someone that can't eat meat, and I really liked the end result!


Vegetarian Turkey

400 grams firm tofu

1 1/2 cup vital wheat gluten

4 tbsp nutritional yeast

1 1/2 tbsp white miso paste

4 garlic cloves chopped

1 tsp salt

4 tbsp dry vegetables in 1/2 cup of warm water

1 piece of cotton


In a food processor, mix the tofu, nutritional yeast, miso paste, garlic cloves, salt, and half of the vegetables that have been rehydrated. Once you have a paste, add the vital wheat gluten. Add water from the vegetables as needed to have a soft and smooth dough. Don't mix it too much because it can end up rubbery.

Make an oval, and wrap it in a piece of cotton. Steamed it for 30 minutes, or until the internal temperature is 80C. Set it aside.

Prepare the marinade

1 tsp fresh rosemary chopped

1 tsp fresh oregano chopped

3 garlic cloves chopped

1/2 tsp oyster sauce

1 tbsp olive oil

1 tbsp soy sauce

2 pieces of rice paper


Mix all the ingredients, and brush the turkey. Wet the rice paper, and fold the turkey. Brush the turkey again with the marinade on top of the rice paper.

Bake your vegetables. I had a mix of onions, carrots, and potatoes. They were seasoned with rosemary, thyme, oregano, salt, and pepper. Once the vegetables are halfway baked, place the turkey, and continue bake it for 15-20 minutes. ENJOY!






And I made the Pumpkin Mousse Terrine from Angie...it was delicious!
