Nowruz again....Pistachios, Rose Water and Cardamom....Cookies and Ice Cream!


For the first time, I want the winter to be over!.....I never complain about weather, and I can tell you that I have felt more cold in Novosibirsk, Ulan Batar and Moscow than here.....

Nevertheless, last week we started a nice Spring week when on Thursday we had a snow storm that cover us with more than 30 cms of snow in less than 6 hours!....To drive the car was stressful, accidents everywhere in the city, and a major collision that involved more than 100 cars.....Therefore, neither time for posting nor visiting your blogs....Here I come again!

We have celebrated Nowruz again....The Zoroastrian New Year.....I believe that if there is a celebration (even though is not my culture), then I have to eat their traditional food during that celebration!

This year, I have made a pistachio, rose water, cashew cookies, and an cardamom, vanilla, rose water ice cream....

Pistachio, Rose Water, Cashew Cookies

250 grams of flour
180 grams icing sugar
170 grams of butter (room temperature)
2 teaspoons of rose water
Cashews

Pistachio paste
60 grams of pistachios
1 tablespoon of icing sugar
1 teaspoon of rose water

Beat the butter with icing sugar until creamy, and add the rose water. Incorporate the flour until you have a dough that it is not sticky to your hands. Place the dough in a fridge for 30 minutes.

Grind the pistachios, and add the icing sugar. Incorporate the rose water until you have a creamy but firm consistency. You can either add more rose water or icing sugar.

Take the dough, and make little balls. With your finger, make a little cavity, and place a pistachio paste. Put a cashew on top. Place in the fridge for 30 minutes before cooking them.

Preheat the oven at 350F, and bake them for 15-20 minutes, or until golden brown. ENJOY!


 



Cardamom, Vanilla, Rose Water Ice Cream


1/2 can condensed milk
1/2 can evaporated milk
1 tablespoons honey (if you want to add more sweet use more honey)
3/4 cups of milk
1 egg yolks
1 tablespoon of cornstarch
1 vanilla bean
6 green cardamoms crushed
1 tablespoon of Rose Water

In 1/2 cup milk,  dissolve the cornstarch and the egg yolk. Heat the remaining milk, and slowly add the milk to the egg yolks and cornstarch. Cook until it forms a cream. Let it cool.

In a blender, combine the condensed milk, evaporated milk,  and honey.  Add the milk cream (cold). Add to the mixture the cardamom (crushed), vanilla seeds, and rose water. Place this mixture in the ice cream maker, and follow the instructions. ENJOY!!
