Celebrating Thanksgiving......To start Goat Cheese, Pistachio and Dates Balls



 This year has flown ...... we are at Thanksgiving again !

The climate is already frozen , almost leafless trees , the smell of snow feel has arrived and the days are shorter ....

But independent of the color gray of sky , which is only a moment in our lives ..... I am grateful every day for this life ...

This journey of 11 years out of the land
where we were born has been like a dinner with dishes that have multiple flavors ..... sometimes bitter flavors with acid dyes , a little salty, umami some either Spicy and not less astringent, but with a delicious sweetness at the end ..... and like all complex and well prepared food stayed with the unique blend of flavors, sensations and experiences that life in this country has given us in the last 11 years ......

Now when I look back the path ..... mixed feelings over me .... have been so many good times ...... and many others who were certainly hard ...... but ultimately served to strengthen our spirit .... and I give thanks for them all .....

Thanks for the friends we meet, the friends we left ..... and friends arrived .....

Thanks for the mere fact of living ..... that and life itself with its joys and sorrows worth .... and it has paid off again this experience even in those moments .....

Thanks to you for sharing this corner of food and for teaching me every day with their recipes .... do not know how much we enjoyed when we make your meals!


And like everything in life ..... after a long period of sacrifices we have made .... comes the reward ..... and as in all good food ..... now we are enjoying the sweetness of the dessert on this trip .....

Here we start with the Thanksgiving Dinner on Friday .... so we have eaten more than Christmas ! ! .....
And not to bore you more ..... I leave you with a peck I did on Friday ..... ENJOY !






Goat Cheese, Pistachio and Dates Balls

140 grams of goat (cheese room temperature)
65 grams of cream cheese (room temperature)
12 dates (pitted). It is better to use half of a date per ball
Salt
pepper
Olive oil
Pistachios (grinded)

Mix the cheeses with salt, pepper, and olive oil until they are creamy. Take 1/2 of a tablespoon in your hands, and place a piece of date (1/2 date). Make a ball, and roll it over pistachios grinded. You can use any nuts. Chill for two hours and sere. ENJOY!!

  1. Wow! Thanksgiving starts early there. I love your cheese balls. It is an excellent idea to serve as an appetizer or side dish. So simple to prepare and yet it makes an elegant platter.
