Spinach cream with egg and cheese

It has been very cold, and we love spinach; therefore, I made one of our favorite dishes

Spinach cream with egg and cheese

500 ml of milk
40 grams of all purpose flour
20 grams cornstarch
1 tablespoon butter
salt pepper
Pimenton de la vera (hot and smoke)
400 grams of fresh spinach (you can use frozen spinach as well)

Wash and chopped the spinach. Steam it and set aside.

Make a white sauce. Melt the butter, add the milk, salt, pepper, Pimenton de la vera, cornstarch and flour. Heat it at medium heat until it thickness. Add the chopped spinach.  Divided in cazuelas. Make a whole in the middle and place an egg. Place them in a preheated oven at 375F until the egg is cooked. Sprinkle with grated cheese and turn of the oven. Serve them warm
