Bread half and half






It is getting very hot here these days....and I love it!!...Thus, our dishes these days are a salad, a cold/warm soup, or a warm stew with bread....and of course....sandwiches

I wanted a more dense type of bread for these days, and I ended up with this half white and half whole wheat bread

Half and Half Bread

300 grams white flour for bread
300 grams whole wheat flour for bread
120 grams levain
10 grams of salt
400 grams of water (more depending on your flour and/or local humidity) 

Make a levain with 30 grams of sourdough, 30 grams of white flour, and 30 grams of water. Let it rise for 3 hours.

Mix all the remaining ingredients, and kneed for 7 minutes. Place it in a warm place for 6 hours, and fold it the four sides every hour. Place it in the fridge for 6 hours. Shape it they way you want, and place it in the fridge for another 12 hours. Bake it at 400F for 30-40 minutes until the inside temperature is at least 207 F.

And for breakfast during weekends? I love baguette with tomato, olive oil, garlic, and a pinch of oregano!
