Pasta with salmon and arugula



Wherever I live I plant vegetables and fruit.....I ate my own planted artichokes in Canada!...Here I plant everything I can in pots....arugula is very easy to grow, and a delicious addition for a good pasta dish
Pasta with salmon and arugula

dough
1.5 cups of flour 00
1/2 cup of semolina
2 eggs
2 tablespoon of olive oil 
water as needed.

Mix all the ingredients until you have a smooth and soft dough. Let it rest covered for 30 minutes. Pass the dough through an Italian pasta maker until #6, and cut it as you wish. This time we cut them wide in pappardelle style.

Sauce
200 grams arugula washed and chopped
2 shallots
2 garlic cloves
1/2 glass of white wine
400 grams of salmon in pieces
20 grams of butter
Salt
pepper
Olive oil
3 cups of Bechamel sauce 
parmiggiano reggiano cheese to put it on top

In a pan, heat the olive oil and sautee the garlic and shallots. Add the chopped arugula, and sautee them for 5 minutes. Add the butter and pieces of salmon, and sautee them for 5 minutes. add the wine, and let it simmer for 3 minutes. Mix it with the béchamel sauce, and mix it with the fresh cooked pasta......ENJOY!

  1. Such a simple yet delicious and comforting meal. Home grown arugula is quite different from the wild arugula.
