Crispy Vietnamese Noodles with Shrimps and Vegetables

 



There was a Vietnamese restaurant that we used to love when we were living in Canada. Our favorite dish was a crispy noodles with vegetables and shrimps. I'm not fan of frying food because I have to clean the stove after. However, I made this dish for the first time at home, and we loved it. For sure I will repeat it, and I will cry after when I have to clean the stove!!!

Cantonese style wheat noodles

About 80 grams per person. Boil as per the package instructions, but take it out of the water 1 minute prior they are fully cooked. Set aside.

Stir fried shrimp and vegetables

24-30 shrimps (4-5 shrimps per person)
Shrimp Marinade
1/2 tsp onion powder
1/2 tsp garlic powder
1 tsp oyster sauce
1 tsp soy sauce thick

Mix all the ingredients of the marinade, and incorporate the shrimps. Set aside for at least 30 minutes. 

Vegetables
5 garlic cloves sliced
1 bunch of broccoli  in pieces
1/2 cup of snow peas 
4 carrots in slices
1 yellow pepper in slices
10 mushrooms
1 onion in julienne
Olive oil
Salt

In a pan, heat olive oil and sauté the veggies. Start with onions and garlic, then add carrots and broccoli, and the the remaining vegetables. Let it stir fry for 5 minutes. Set aside



Sauce
2 tablespoons soy sauce
2 tablespoons oyster sauce
2 tablespoons of fish sauce 
1 teaspoon sesame oil 
2 tablespoons of cornstarch
1/2 cup water

Mix all the ingredients and set aside.

In a pot, cook the shrimps, and add it to the vegetables. Keep the pan warm and the sauce. Cook it until it thickens.



Calculate how much noodles you want per dish. Distribute it on a pan with hot olive oil, and turn it after 2-3 minutes. They should be crispy but not burned. Place it on a dish, and on top serve the shrimp and vegetables mix. It is delicious. ENJOY!
