First of all, my apologies for not being able to comment in your blog. Since Monday, I'm trying to comment in different blogs, and it is impossible. I tried all day, and i could only comment in three blogs.....so frustrating!
During Christmas, I had family and friends that came to visit me, and I didn't want to spend all my time in the kitchen.....I found a different type of pizza in YouTube, and we loved it!
It is called BBQ pizza because you bake first the dough on both sides in the BBQ (like a pita bread or lavash), and then you put the toppings, and the pizza go back again to the BBQ. It is delicious because it is smoky, crunchy, and with lots of flavors. The YouTube channel is Gluten Morgen
BBQ Pizza
602 grams Flour 00
374 grams Water
6 grams Fresh Yeast
12 grams Salt
15 grams Olive Oil (original recipe has only 6 grams)
Brushing:
1/2 cup of olive oil
4 garlic cloves
Finely chopped the garlic and mix it with olive oil. Set aside for 1 hour.
Mix all together, let it rise for 2 hours, and place it in the fridge overnight or 24 hours. For me, the pizza dough taste better when it has been in a slow/cold fermentation process.
Divided in 3 portions.
Brush the pizza dough that it is baked with the mix of olive oil and garlic; then, you place the toppings.
I used three fillings:
Potatoes (three colors), fior di latte (on bottom), caramelized onions, green olives, parmigiano and gouda cheeses
Home made tomato sauce, mozzarella, saute mushrooms with garlic, parmigiano and gouda cheeses
Fior di latte (on bottom), caramelized onions, parmigiano and gorgonzola cheeses

ReplyDeleteThe one we use (the Bengal gram flour) is yellow.
Hi Balvinder, I used 00 flour for pizza. It is not gram flour as the besan flour made out of chickpeas. This 00 flour has gluten. The confusion might be because I wrote the weight of the flour in grams. I hope this helps!
