Mashed Potatoes, Spinach, and Cheese pie in a pan

 



This is not a tortilla, this is a pie in a pan. It is very easy, fast, and a delicious alternative to the oven.


Mashed Potatoes, Spinach, and Cheese pie in a pan

10 medium size potatoes, boiled, and mashed. Let it cool.
200 grams parmiggiano reggiano grated cheese
salt
pepper
2 eggs
300 grams of fresh spinach. Washed, chopped, and sautee with olive oil, garlic, and oregano
Cheese in slices. I used havarti
Parchment paper

Mix the mash potatoes with parmiggiano cheese, salt, pepper, and eggs. Divide it in two portions.

Place a piece of parchment paper in the bottom of the pan. Place half of the mashed potatoes mix. On top, place cheese, the spinach mix, cheese, and cover it with another layer of mashed potatoes.


Cover the pan with a lid, and cook  it for 10-12 minutes at medium heat. Carefully, take it into a plate, place a new piece of parchment paper, and cook it for another 10 minutes with lid. Serve it warm or cold. ENJOY!
