Γαλατοπικός (Galatopita) Postre Griego

 


Me prometí no ver más recetas griegas en youtube, pero no pude resistir ..... ¡¡Este postre es fácil, barato y tan delicioso !! ... la receta original es con naranja, pero no tenía; así, lo hice con ralladura de limón ... el sabor era similar a Crema Catalana ... ¡¡qué bueno !! ... Luego, lo hice con naranja, y el sabor y consistencia fue similar a Galaktoboureko ... ¡¡No puedo esperar para hacerlo de nuevo !!

Γαλατοπικός (Galatopita)


1 litro de leche
3 huevos
170 g de azúcar
60 g de sémola fina
60 g de maicena
1 cucharada de extracto de vainilla
Ralladura de 1 naranja o 1 limón
50 g de mantequilla

Para cepillar
1 huevo
2 cucharadas de agua
1 cucharada de azúcar

En una olla, mezcle todos los ingredientes (excepto la mantequilla) y cocine hasta que esté espeso y cremoso. Agrega la mantequilla y revuélvela muy bien.

Con mantequilla, engrasar un molde de horno y espolvorear con sémola. Coloca la crema y colocar encima  la mezcla de agua y huevo. Hornee en el horno a 375F durante 10 minutos o hasta que esté dorado. Sírvelo frío. ¡DISFRUTAR!

I promised myself not to watch more  Greek recipes in youtube, but I couldn't resist.....This dessert is easy, cheap and so delicious!!...the original recipe is with orange, but I didn't have it; thus, I made it with lemon zest....the taste was similar to Crema Catalana....so good!!...Then, I made it with orange, and the taste and consistency was similar to Galaktoboureko....I can wait to make it again!!

Γαλατοπικός (Galatopita)


1 liter milk
3  eggs
170 g sugar
60 g fine semolina
60 g cornstarch
1 tbsp vanilla extract
Zest from 1 orange or 1 lemon
50 g butter

For brushing
1 egg
2 tbsp water
1 tbsp sugar

In a pot, mix all the ingredients (except the butter) and cook it until it is thick and creamy. Add the butter, and stir it very well. 

With butter, grease an oven mold, and dust it with semolina. Place the cream, and brush it with the water/egg mixture. Bake it in the oven at 375F for 10 minutes or until golden brown. Serve it cold. ENJOY!

Platos de Accion de Gracias

 


¡Es Acción de Gracias otra vez! .... Lo sé, celebré Acción de Gracias en septiembre (Michaelmas), Acción de Gracias en octubre (Canadá) y ahora Acción de Gracias en noviembre (EE. UU.) .... ¡¡Comamos calabaza de nuevo !!

Me encanta el color de esta temporada ... cuando camino, me encanta ver el color de las hojas rojas ...


Siempre preparo los mismos platos para el Día de Acción de Gracias. Sin embargo, me gusta incluir nuevos platos para probar nuevos sabores.
Este año, hice (con algunas variaciones) esta Crema de Manzana y Calabaza de Javier .... está deliciosa ...

Mis variaciones fueron que usé puerro (me encanta el puerro en crema de verduras), cúrcuma y Hierbas de Provenza .... Gracias Javier .... ¡tu crema estaba deliciosa!

De postre, hice una simple Jalea de Pera y Crema pastelera en Pionono ...

Para la jalea de pera

2 peras peladas y cortadas en cubitos (conserva la cáscara y las semillas)

1 pedazo de canela

2 anís estrellado

2 clavos de olor

una cucharada de mantequilla

una cucharada de ron

3 cucharadas de azúcar (más o menos según tu gusto)

1 taza de agua

5 hojas de gelatina

Coloque las cáscaras y semillas de pera con las especias y el agua en una olla. Déjelos hervir durante 10 minutos a fuego lento. Cuela y desecha las semillas, la cáscara y las especias. Agrega el azúcar y las láminas de gelatina previamente remojadas en agua fría.

En una sartén, disuelve la mantequilla. Agrega las peras picadas, el ron y espolvorea con un poco de azúcar. Déjelo hervir a fuego lento durante 3 minutos. Las peras deben estar cocidas, pero firmes. Mézclalo con la gelatina y colócalo en un molde de vidrio. Déjalo reposar durante 2 horas en la nevera.


Haz un pionono. En mi caso, 3 huevos, 100 gramos de azúcar, 100 gramos de harina, 1/2 cucharadita de levadura en polvo. Separar los huevos y batir las claras con 50 gramos de azúcar hasta que estén espumosas y muy firmes. Batir las yemas de huevo con 50 gramos de azúcar, hasta que estén bien cremosas. Mezclar ambos e incorporar la harina y el polvo de hornear previamente mezclados. Colóquelo en un papel de horno y hornéelo en un horno precalentado a 165 ° C durante 10-12 minutos. Deja enfriar.

Prepara tu crema pastelera de vainilla favorita.

Puedes disponer este postre en tazas, o en un molde para tarta. Una capa de pionono, una capa de crema pastelera, una capa de pionono, una capa de crema pastelera y gelatina de pera, una capa de pionono y una capa de crema pastelera y gelatina de pera. Puedes hacer tu propio arreglo. ¡Estaba fresco y delicioso!

Además, hice esto


Coliflor y Pimientos con Feta y Parmiggiano

1/2 media coliflor

1/2 pimiento amarillo

1/2 pimiento naranja

3 huevos

1/2 taza de leche

70 gramos de queso feta

50 gramos de queso parmiggiano rallado

2 dientes de ajo en rodajas

aceite de oliva

orégano

sal

Lavar y cortar en trozos la coliflor y los pimientos morrones. Condimentarlos con aceite de oliva, sal y orégano, y hornearlos hasta que estén cocidos y crujientes. Deja enfriar.

Mezcle los huevos, la leche, el queso feta, el orégano y los dientes de ajo. Agrega las verduras asadas. Colóquelo en un molde de horno previamente engrasado con aceite de oliva. Hornéalo a 165C durante 20 minutos, o hasta que esté cocido. Antes de sacarlo del horno, espolvorear con un poco de queso parmiggiano y dejar que se derrita durante 5 minutos. ¡DISFRUTAR!



















 

Thanksgiving dishes


It is Thanksgiving again!....I know, I celebrated Thanksgiving in September (Michaelmas), Thanksgiving in October (Canada), and now Thanksgiving in November (USA)....Let's eat pumpkin again!!

I love the color of this season.....when I walk, I love to see the color of the red leaves....

I always make the same dishes for Thanksgiving. However, I like to include new dishes to try new tastes.

This year, I made (with some variations) this Apple and Pumpkin Cream from Javier....it is delicious...

My variations were that I used leek (I love leek in vegetables cream), turmeric, and Herbs de Provence....Thanks Javier....your cream was delicious!

For dessert, I made a simple Pear Jelly, Pastry Cream in pionono...

For the Jelly Pear

2 pears peeled off and diced (keep the peel and seeds)

1 piece of cinammon

2 star anise

2 cloves

a spoon of butter

a tablespoon of Rhum

3 tablespoons of sugar (more or less depending on your taste)

1 cup of water

5 gelatin sheets

Place the pear peels and seeds with the spices and water in a pot. Bring them to boil for 10 minutes at low heat. Strain it and discard the seeds, peel, and spices. Add the sugar, and the gelatin sheets previously soaked in cold water. 

In a pan, dissolve the butter. Add the diced pears, the rum, and sprinkle it with some sugar. Let it simmer for 3 minutes. The pears should be cooked, but firm. Mix it with the gelatine mix, and place it in a glass mold. Let it set for 2 hours in the fridge.


Make a pionono. In my case, 3 eggs, 100 grams of sugar, 100 grams of flour, 1/2 teaspoon of baking powder. Separate the eggs, and beat the egg whites with 50 grams of sugar until foamy and very firm. Beat the egg yolks with 50 grams of sugar, until they are very creamy. Mix them both, and incorporate the flour and baking powder previously mixed. Place it on a parchment paper, and bake it in a preheated oven at 165C for 10-12 minutes. Let it cool.

Make your favorite vanilla pastry cream. 

You can arrange this dessert in cups, or in a cake mold. One layer of pionono, one layer of pastry cream, one layer of pionono, one layer of pastry cream and pear jelly, one layer of pionono, and one layer of pastry cream and pear jelly. You can make your own arrangement. It was fresh and delicious!

Also, I made this 

Cauliflower and Bell Peppers with Feta and Parmiggiano Cheese

1/2 half cauliflower

1/2 yellow bell pepper

1/2 orange bell pepper

3 eggs

1/2 cup of milk

70 grams of feta cheese

50 grams of parmiggiano grated cheese

2 garlic cloves sliced

olive oil

oregano

salt

Wash and cut in pieces the cauliflower and bell peppers. Season them with olive oil, salt and oregano, and bake them until they are cooked and crunchy. Let it cool. 

Mix the eggs, milk, feta cheese, oregano, and garlic cloves. Add the roasted veggies. Place it in a pan previously greased with olive oil. Bake it at 165C for 20 minutes, or until it is cooked. Before taking it out of the oven, sprinkle it with some Parmiggiano cheese and let it melt for 5 minutes. ENJOY!

Malai Gulab Jamun....Dulces de Diwali

 


Hace un par de semanas celebramos  Diwali ... la celebración donde la luz vence a la oscuridad y donde el mal es derrotado por el bien ...

Mientras comíamos platos indios, preparé un dulce indio especial por primera vez ... Malai Gulab Jamun ... Lo sé ... parecen berlines ... ¡pero saben diferente!


Malai Gulab Jamun

1 taza de leche en polvo
1 1/2 cucharada de mantequilla (temperatura ambiente)
1 cucharada de harina para todo uso
2 cucharadas de sémola
1 cucharadita de levadura en polvo
2 cucharadas de agua
6 a 10 cucharadas de leche (varía)
Aceite para freír

jarabe

2 tazas de agua
3/4 taza de azúcar
2 vainas de cardamomo
1 cucharadita de jugo de limón.
1 cucharadita de agua de rosas


Mezcle la leche en polvo con la mantequilla. Agrega el polvo de hornear y la harina para todo uso. Mezclar bien. En un recipiente aparte, coloque la sémola y agregue el agua. Deja que se hidrate durante 15 minutos. Mezclar con la leche en polvo. Agregue la leche lentamente hasta obtener una masa suave y no pegajosa. ¡No lo amases! Si es necesario, agregue más leche. Déjalo reposar durante 10-15 minutos. Toma una porción y haz un ovoide con tus manos.

Freír las bolas hasta que estén doradas. Colócalos en un recipiente resistente al calor.


Mezcle el agua, el azúcar, el cardamomo, el jugo de limón, el agua de rosas y una pizca de azafrán. Hervir durante 10 minutos. Cuando las bolas estén tibias, colocarlas en el almíbar y hervir a fuego lento durante 15 minutos. Dejar en almíbar hasta que se enfríen.

Crema para el malai 1/2 taza de leche en polvo 2 cucharadas de azúcar 1/4 taza de leche 10 gramos de mantequilla
Pon todo en una sartén antiadherente y cocina hasta que se separe de las paredes. Déjelo enfriar.


Corta el malai por la mitad (no profundo) y rellena con la crema ..... ¡Disfruta!















 

Malai Gulab Jamun....Diwali sweets


A couple of weeks ago, we celebrated Diwali.....the celebration where the light wins over darkness, and where the evil is defeated by the good....

As we ate Indian dishes, I made a special Indian sweet for the first time....Malai Gulab Jamun......I know....the look like berlines.....but they taste different!

Malai Gulab Jamun

1 cup of powdered milk
1 1/2 tablespoon butter (room temperature)
1 tablespoon all-purpose flour
2 tablespoons of semolina
1 teaspoon baking powder
2 tablespoons of water
6 to 10 tablespoons milk (varies)
Oil for frying

syrup

2 cups of water
3/4 cup sugar
2 cardamom pods
1 teaspoon lemon juice
1 teaspoon rose water


Mix powdered milk with butter. Add the baking powder and all-purpose flour. Mix well. In a separate bowl, place the semolina and add the water. Let it hydrate for 15 minutes. Mix with the powdered milk. Add milk slowly until you have a smooth, non-sticky batter. Don't knead it! If necessary, add more milk. Let it rest for 10-15 minutes. Pick up a portion and make an ovoid with your hands.

Fry the balls until golden brown. Place them in a heat-resistant container. 



Mix together the water, sugar, cardamom, lemon juice, rose water, and a pinch of saffron. Boil for 10 minutes. When the balls are warm, place them in the syrup and boil at low heat for 15 minutes. Leave in syrup until they are cool.

Cream for the malai 1/2 cup powdered milk 2 tablespoons sugar 1/4 cup milk 10 grams butter
Put everything in a non-stick pan and cook until it separates from the walls. Let it cool down.


Cut the malai in half (not deep) and fill with the cream ..... Enjoy!

Tarta de manzana, nueces y pasas

 




Una receta muy sencilla para disfrutar con una taza de té o café ....

Tarta de manzana, nueces y pasas

3 huevos
80 g de azúcar
60 g de mantequilla a temperatura ambiente
100 g de harina de repostería
50 gr de harina de almendras
1 cucharadita de levadura en polvo
3 manzanas Gala, sin piel, sin semillas y en rodajas
Nueces
Pasas

Batir el azúcar y la mantequilla. Agrega los huevos. Incorpora la harina, la harina de almendras y la levadura en polvo. Dejar de lado.

En un molde para pastel, coloca papel de horno y agrega la mitad de la masa. Distribuya 1 1/2 de las manzanas, nueces y pasas. Encima, coloca la otra mitad de la masa. Distribuya las manzanas restantes. Espolvoree con azúcar y hornee a 350F durante 25 minutos, o hasta que esté dorado. ¡¡DISFRUTAR!!




 

Apple, walnut and raisin cake






A very simple recipe to enjoy with a cup of tea or coffee....

Apple, walnut and raisin cake

3 eggs
80g sugar
60 g butter at room temperature
100 g of pastry flour
50 gr of almond flour
1 teaspoon baking powder
3 Gala apples, skinless, seeded and sliced
Walnuts
Raisins

Cream the sugar and butter. Add the eggs. Incorporate the flour, almond flour, and baking powder. Set aside.

In a cake mold, place parchment paper and add half of the batter. Distribute 1 1/2 of the apples, walnuts and raisins. On top, place the other half of the batter. Distribute the remaining apples. Sprinkle with sugar, and bake it at 350F for 25 minutes, or until golden brown. ENJOY!!
