I have to confess....I LOVE BERLINES!!!!....Usually, I make them the night before for breakfast the next day on a weekend......I love them so much that when I make them....I don't sleep well that night just waiting to eat them at breakfast!!!!....
Berlines
500 g of flour
170 g milk
30 g of water
2 teaspoons instant dry yeast
90g sugar
60 g butter room temperature
1 tablespoon sourdough (optional)
1 egg and 1 egg yolk
a pinch of salt
In a pot, warm the milk and water. Take it off from the heat. Add 30 grams of sugar and the yeast. Let it foam for 10 minutes. add the sourdough. Let it rest for 5 minutes. Transfer to a big bowl, and add the egg, egg yolk, butter, salt, and sugar. Mix it well. Add the flour and kneed it for 7 minutes. Let it rest in a warm place for 90 minutes.
With a roll pin, flatten the dough until you have a thickness of 2 cm. With a cookie cutter (6 cms), cut it in circles. Let it rest for 90 minutes.
In the meantime, make your vanilla pastry cream. My recipe is the following:
90g sugar
500g milk
45 g cornstarch
3 eggs
1 tbsp vanilla
Mix all together, and cook it in a pot stirring well until it thickens. Set aside.
In a pot, place some oil for frying. Be careful!!....the oil should be very hot. Fry them 2 minutes per side. Take them out, and place them over paper towel. Cut one side, and fill it with pastry cream...ENJOY!!!!!!
They look authentic and so tempting with vanilla cream.
