Greek Picnic Pie......A Savoury Dish to Take for a Picnic


When I knew that Carmela was having a contest, I knew that I wanted to contribute to her recipe collection with our Greek Picnic Pie....This is our contribution for the contest  Comida Para Llevar de Excursion  Thank You  Carmela   for this opportunity!!




This is a very savoury and healthy dish that is perfect to take away for a picnic....


Greek Picnic Pie


300 grams of  Puff Pastry  I use the same puff pastry as for my Galette des Rois (the quantity will depend on the size of your oven proof dish)
1 cup of cooked rice
300 grams of spinach (washed and chopped)
1/2 onion (chopped)
1 garlic (chopped)
1 eggplant
100 grams of feta cheese
35 grams of parmiggiano cheese
40 ml of Greek  yogurt
3 eggs
Olive oil
Oregano
Salt
Pepper

Roll the puff pastry, and place it in a oven proof dish. With a fork, make holes in the dough, or put baking beads on top.  Place it in a preheated oven at 380F  for 12 minutes, or until golden.

Cut the eggplant in thin slices, and fry them in olive oil. Season it with salt and pepper. Reserve.

Heat a pan with olive oil, and fry the onion and garlic. Add the spinach. Season it with salt, pepper, and oregano. Let it cool. When the spinach is cool, mix it with rice, feta cheese, parmiggiano cheese, eggs and Greek yogurt.

Over the cooked puff pastry, distribute the cooked slices of eggplant, then the rice/spinach mixture, and on top place the remaining slices of eggplant. Bake it in a preheated oven at 380F for 30 minutes (or until is cooked)....Enjoy!!
