Chole Bathura.....Punjabi street food





I love Punjab and it's street food! My fiend from Punjb taught me this recipe

Chole Bathura is a comforting spicy food that is easy to make and make your body warm...

For CHOLE:

450g Chickpeas                                 
1 onion  chopped
3 bay leaves                
2 tsp cumin seeds             
5 garlic chopped
1 piece ginger chopped (2.5 cm)
200 grams tomato puree
salt
1.5 tsp red chili powder  or more depending on your taste
 1 tsp turmeric powder                         
 1 tsp garam masala                              
1 green chili chopped                                    
 chopped cilantro for garnishing
oil or ghee

Soak the chickpeas overnight, and cook them. Let aside.

Heat oil, and sautee the onion, garlic and ginger. Add salt, and bay leaves, let it simmer for 3 minutes. Add the turmeric, garam masala, and chili powder. Let it cook for 3 minutes. Add the tomato paste or puree. Let it simmer for 4 minutes. Add the chickpeas, the green chili, and let it simmer for 10 minutes. With a fork, you can mash some chickpeas to make the chole thicker. Enjoy!


 BHATURE:

 450g all-purpose flour                                              
1 tsp salt                                                                    
pinch of baking powder                                                 
1 tbsp semolina                                                    
2 tbsp milk powder                                                      
1/2 cup water  warm                                                              
1/2 tsp sugar                                                                   
1 tsp yeast                                                                  
1 tsp oil or ghee                                                           
2 tsp yogurt                                                                   
1 tsp red chili flakes (optional)                                
2 tsp urid lentils soaked overnight    (optional)       

Mix the water with yeast and sugar. Let it foam for 10 minutes. Mix all the dry ingredients, and mix it with the foamy mixture. You may need some water to make a dough (pizza texture). Knead for 10 minutes. Let it rest for 1 hour, take the gas out, and let it rise for 1 hour again. Make 12 balls, and roll them with a roll pin. Fry them in hot oil, and enjoy with Chole!!

  1. Qué ricos están los garbanzos y más con las especias que lleva. Claro que el pan frito debe quedar crujiente y todo junto es irresistible.
