Creamy Paneer Bhurji and Spinach Naan with spinach filling

I have another recipe of paneer bhurji, but this one has the paneer grated. Definitely, this version is creamier and softer than the one with paneer in cubes.

Creamy Paneer Bhurji

350 Grams Spinach washed and chopped
100 Grams Grated Paneer
1 capsicum (green bell pepper) finely chopped
1 tsp Dry Fenugreek Leave
1/2 cup of plain yogurt
2 tsp Ghee
1/2 tsp Cumin Seeds
2 Dry Red Chillies
2 Chopped Onions
3 chopped garlic
1 piece of ginger grated
1/2 tsp Turmeric Powder
1tsp Coriander seeds Powder
1tsp Cumin seeds Powder
1 1/2 tsp Garam Masala
1 tsp Kashmiri red chili powder
2 Chopped Tomato
Salt to Taste

Heat the ghee, and fry/cook the cumin seeds, onion, garlic and ginger. Add the green bell pepper, and all the spices, and let it simmer for 2 minutes. Add the tomatoes, and let it simmer for another 2 minutes. Add the spinach, paneer and yogurt. Let it simmer for 5 minutes. Correct it for salt and spiciness. ENJOY!

I saw a triangular shaped naan bread with other species. I took the idea, and make it with spinach.

Spinach Naan with spinach filling

Naan
1 teaspoon of sugar
1/2 cup of warm water
2 teaspoons of dry yeast
1 tablespoon of sourdough starter (optional)
1/2 cup of yogurt
2 1/2 cup of flour
3 tbsp of chopped fresh spinach
water as needed.

Mix the warm water, sugar and yeast. Let it be foamy. Add the sourdough if you have it.

Mix the yogurt with the foamy yeast mix. Add the flour, the spinach and add water if needed. You need a sticky dough. Let it rise for 2 hours. Divide it in 10 balls,

Filling

150 grams cooked spinach
70 grams grated paneer
70 grams havarti cheese in pieces
1/2 teaspoon of turmeric
1 teaspoon dry chili powder Kashmiri
1/2 teaspoon garam masala
salt

Mix all together and set aside. Divide it in 10 portions.

With a roll pin, flatten the dough and place a portion of the filling in triangle shape. Fold the dough in triangle.

In a pan, put some oil and cook the naan 3-4 minutes each side.  ENJOY!!
