Kefir...blueberry kefir muffins and apple, almond, raisins kefir cake





I love home made kefir, and when I have too much of it, I make muffins or apple cake. The texture of the apple cake is very soft, almost like a flan....delicious and healthy!

2 1/2 cups all-purpose flour

3 teaspoons baking powder

4 large eggs, room temperature

180 grams sugar

250 grams of kefir

70 grams of butter

1 lemon zest

milk as needed (I used 1/4 cup)

2 apples peeled and in cubes

raisins

almonds sliced


Mix butter, sugar and lemon zest. Beat it until creamy. Add the eggs, and beat it. Incorporate the kefir, flour, and baking powder. If needed, then add some milk untiol you have a cake batter texture.


Preheat oven to 180C. Place parchment paper in your mold. Place half of the batter in the mold, then add apple, raisins and almonds, place the rest of the batter. Bake it at 180C for 30-40 minutes, or until a skewer or knife inserted is dry. Serve it and ENJOY!





Blueberry kefir muffins

2 cups all-purpose flour

3/4 cup granulated sugar

1teaspoon vanilla bean plus 1 teaspoon vanilla essence

2 teaspoons baking powder

1/2 teaspoon salt

70 grams of butter  room temperature

3 eggs room temperature

2/3 cup kefir

1/3 cup whole milk 

frozen blueberries


Mix sugar, butter and vanilla. Beat it until they are creamy. Add eggs, and continue beating. Incorporate kefir, flour, baking powder. add milk if needed. Place the batter in paper cupcakes, and add 4-5 frozen blueberries. Place a teaspoon of batter on top. Bake it at 180C for 20 minutes, or until a skewer or knife inserted is dry. Serve it and ENJOY!
