Celebrating Nowruz...Bastani ....Persian Saffron Ice Cream


It is Spring and we have celebrated Nowruz again....I love the smell of rose water in mi kitchen, it reminds me the times we were invited to celebrate Nowruz at our friend's home in Canada.

This week rose water, saffron, and pistachio were in my kitchen, and of course in Bastani. I have made Bastani before, but this is a new recipe. It has "chunks" of cream which is how it should be done....


Bastani

240 ml of milk
400 ml whipping cream
2 egg yolks
90 grams of sugar 
3 tablespoons of powder milk
1/2 cup pistachios chopped
1/4 cup of rose water
1/2 teaspoon saffron crushed and mic with 1/4 cup of warm water (saffron water) 
1 teaspoon vanilla paste

Combine all ingredients except pistachio, rose water and saffron water. Mix them well, and cook it in a pot at medium low heat until it thickens. Set aside. When it is cold, mix the remaining ingredients. Place it in the fridge for 2 hours.


In the meantime, place on a tray covered with saran wrap, 150 ml of whipping cream, and place it in the freezer. It has to be a thin layer. Let it froze for 2 hours.

Make your ice cream as usual. I place my custard in my ice cream machine for 20 minutes. When you transfer the ice cream to a pot, place in between pieces of frozen cream. Place it in the freezer for 2 hours before serving. ENJOY!
