Summer dips...mushrooms, tuna, and sun-dried tomatoes with olives....

 

O boy!....It's July and I have not been able to post!

I have been busy testing my vegetable garden in a new location, having guests with special diets, and repairing small things in this home.

Here I go again!

I had to make special meals since I had guests that follow keto. It was somehow challenging since I had to get rid of carbohydrates. I found easy dips that are keto friendly to enjoy these Summer days in the backyard.

Tuna cream cheese dip

1 tuna, canned in oil drained

70 grams mayonnaise

250 grams cream cheese

40 g walnuts, shelled, halved

2 spring onion (green part only) chopped

2 garlic cloves chopped


In a food processor, place the walnuts, spring onions, and garlic. Mix all together for one minute. Add the mayonnaise and the cream cheese. Blend it all together until you have a smooth paste. Add the tuna drained, and mix it quickly. ENJOY!


Mushroom cream cheese dip

350 grams of mixed mushrooms sliced

50 grams mayonnaise

250 grams cream cheese

50 g walnuts, shelled, halved

A bunch of parsley chopped

2 garlic cloves chopped

Olive oil

Salt


Sautee the mushrooms in olive oil. Set aside. Let it cool and drain it.

In a food processor, place the walnuts, parsley, and garlic. Mix all together for one minute. Add the mayonnaise and the cream cheese. Blend it all together until you have a smooth paste. Add the mushrooms, and mix it quickly. ENJOY!

Sun-dried tomatoes with olives cream cheese dip

40 grams of sun dried tomatoes. 

100 grams of black olives pitted

40 grams mayonnaise

300 grams cream cheese

2 garlic cloves chopped

Fresh thyme, rosemary, and oregano. Chopped


Soak the sun dried tomatoes in warm water for 3 hours. Set aside. Drain and chop them.

In a food processor, place olives, sun dried tomatoes and garlic. Mix all together for one minute. Add the mayonnaise, the herbs and the cream cheese. Blend it all together until you have a smooth paste. ENJOY!


As a keto idea, I made devil eggs filled with a mix of egg yolk, avocado, mayonnaise and herbs, with a topping of a shrimp. ENJOY!

  2. All of these dips sound delicious and I am sure they are. I am a big fan of devilled eggs and will consider adding a shrimp next time I make them. Maybe even this afternoon!
