Mas alcachofas.....ravioles de alcachofas....y salsa de alcachofas para los fideos



Ha sido una semana de alcachofas. Parece que estamos teniendo nuestro propio festival de Alcachofas como los de Castroville, Benicarlo, Cerda (en Sicilia), Ladispoli, o Toscana ..... Sí .... tenemos nuestro propia festival de la alcachofa!

He publicado como preparo la Pasqualina, y el proceso de limpieza y cocción de las alcachofas. Para hacer los raviolis de alcachofa, debe seguir las mismas instrucciones de limpieza y para cocinarlos, pero el relleno es ligeramente diferente.

En otro posting, he publicado cómo hacer pasta fresca. Y esta es la forma en que preparo la masa de ravioles.

Ahora, viene la receta y las fotos:

Relleno
8 alcachofas pequeñas
3 o 4 dientes de ajo
El aceite de oliva
Sal
Pimienta
Nuez moscada
Mejorana
1 huevo
1 taza de queso rallado parmesano reggiano (o más para hacer un relleno seco)

Una vez que haya limpiado, cocinado y sazonado las alcachofas (como en el post anterior), dejar enfriar y picar en trozos pequeños. Una vez que haya enfriado, añadir el huevo, mejorana y queso parmesano. El relleno tiene que estar seco para que se cocinan en los ravioles. Usted puede agregar más parmesano, o pan rallado para evitar añadir la salinidad del queso.


Luego tomar la masa de pasta, pasar por la máquina de pasta, y llenar los ravioles de la misma manera como lo hice con el post de panzotti


 Cocer en agua con sal, y mezclar con aceite de oliva. Siempre preparo más relleno para convertirla en la salsa. Preparar media porción de relleno, agregar 1 taza de crema y 1 / 2 taza de leche. Agregar mas pimienta y calentarla. Póngalo en la parte superior de los raviolis, y encima de la pasta ..... Disfrute!

It has been an artichoke week. It seems that we are having our own Artichoke festival like those in Castroville, Benicarlo, Cerda (in Sicily), Ladispoli , or Tuscany.....Yes ....we are having our own artichoke festival!!!

I posted how I make the Pasqualina, and the cleaning / cooking process for the artichokes. To make the artichoke raviolis, you follow the same instructions for cleaning and cooking them, but the filling is slightly different.

Many posts ago, I posted how to make fresh pasta. And this is the way I do to make the ravioli dough.

Now, comes the recipe and the pictures:


Filling
8 small artichokes
3 or 4 garlic cloves
Olive oil
Salt
Pepper
Nutmeg
Marjoram
1 egg
1 cup of grated parmiggiano reggiano cheese (or more to make the filling dry)

Once you have cleaned, cooked and seasoned the artichokes (as in the previous post), let it cool and chop them in small pieces. Once you have the small pieces, add the egg, marjoram and parmiggiano cheese. The filling has to be dry in order to be cooked in the ravioli. You can add more parmiggiano, or some people add breadcrumbs to avoid the saltiness of the cheese.




Then you make the pasta dough, pass it through the pasta machine, and fill the raviolis in the same way as I did with the panzotti posting


Cook them in salty water, and toss it with olive oil. I always prepare more filling to convert it into the sauce. Prepare half portion of the filling, add 1 cup of cream and 1/2 culp of milk. Add more pepper and heat it. Put it on top of the raviolis, and on top of pasta.....Enjoy!!!

Temporada de Alcachofas...."Pasqualina de Alcachofas" o "Pie de Alcachofas"....Amo las alcachofas!!!



Me encantan las alcachofas, y cuando las encuentro, compro cantidades suficientes para hacer uno de mis platos favoritos “Pasqualina".....  Sé que en Argentina y Uruguay, Pasqualina está hecha de espinacas o acelgas (y tiene huevos duros entremedio). Me encantan esas Pasqualinas, pero para mí Pasqualina debe ser de alcachofas.....Así aprendí a comerla y así es como se hace de manera típica en la Liguria.





Esta receta es muy simple y sabrosa, pero requiere mucho trabajo. Sin embargo, no me importa el tiempo empleado cuando termino comiendo uno de mis platos favoritos .......

Como he comprado un montón de alcachofas, voy a hacer un montón de platos con alcachofa. Hoy en día, es Pasqualina ..... el resto de la semana voy a preparar raviolis de alcachofa y linguinis con salsa de alcachofa.

Aquí va la receta:

Masa
400 gramos de harina
1 / 2 cucharadita de sal
3 cucharadas de aceite de oliva
Agua tibia (lo necesario)

Para pincelar la masa
Mezcla de 1 cucharada de mantequilla y 3 cucharadas de aceite de oliva tibios

Relleno
12 alcachofas pequeñas
3 o 4 dientes de ajo
Aceite de oliva
Sal
Pimienta
Nuez moscada
Mejorana
4 huevos
1 taza de queso rallado parmesano reggiano
1 / 4 taza de queso ricotta
1 limón

Elija doce alcachofas pequeñas. Llene un recipiente con agua y el jugo de medio limón. Pelar cada alcachofa de abajo hacia arriba, dejando sólo el corazón. Colóquelas en agua con limón para evitar el color marrón.

Una vez que han sido peladas, cortelas a lo largo de los corazones de alcachofa en tiras. Coloquelos en una sartén con aceite de oliva y el ajo. Saltear y añadir la pimienta, la nuez moscada y un poco de sal (recuerde que va a utilizar una gran cantidad de queso parmigiano reggiano que es salado). Una vez que esté cocido, dejar enfriar. Reserve.

Para hacer la masa, mezclar la sal y la harina. Agregue el aceite de oliva y agua caliente como sea necesario para hacer una masa elástica. Pase a través de los rodillos de la fábrica de pasta hasta el número 7. Tiene que ser una masa muy delgada.

En un molde, poner una capa fina de la masa, y el pincel con una mezcla de aceite de oliva y la mantequilla. Continuar poniendo capas, untando cada una con mantequilla y aceite de oliva.Por lo general, hago seis capas. Usted puede hacer más o menos.
Batir los huevos e incorporar la alcachofa cocida (y fría). Incorporar el queso ricotta, parmesano reggiano y mejorana. Distribuir uniformemente sobre la masa de tarta.



Cocine en horno precalentado a 400F por 20-30 minutos o hasta que esté completamente cocido y dorado. Pasqualina se puede comer tibia o fría (me gusta fría) con un chorro de aceite de oliva en la parte superior. Disfrútalo!

Artichoke season...."Artichoke Pasqualina" or Artichoke pie....I just love artichokes


I love artichokes, and when I find them, I buy enough quantities to make one of my favorite dishes....."Pasqualina".....

I know that in Argentina and Uruguay, Pasqualina is made of spinach or swiss chard (and it has boiled eggs in between). I love those Pasqualinas, but for me Pasqualina must be made of artichokes. That is how I learned to eat and that is how is made in Liguria.

This recipe is very simple and tasty, but it requires a lot of work. Nevertheless, I don't care about time consuming when I end up eating one of my favorite dishes.......

Since I have bought a lot of artichokes, I will make a lot of artichoke dishes. Today, it is Pasqualina.....the rest of the week I will prepare artichoke raviolis and linguinis with artichoke sauce.

Here goes the recipe:

Dough
400 grams of flour
1/2 spoon of salt
3 spoons of olive oil
Warm water (as needed)

To brush the dough
Mix of 1 spoon of butter and 3 spoons of olive oil

Filling
12 small artichokes
3 or 4 garlic cloves
Olive oil
Salt
Pepper
Nutmeg
Marjoram
4 eggs
1 cup of grated parmiggiano reggiano cheese
1/4 cup of ricotta
1 lemon

Choose twelve small artichokes. Fill a container with water and the juice of half lemon. Peel every artichoke from bottom up, leaving only the heart. Place them in water with lemon to avoid the brown color.



Once you have peeled them, cut along the artichoke hearts in small strips.Plave them in a pan with olive oil and garlic. Saute them and add the pepper, nutmeg, and a little bit of salt (you will use a lot of parmiggiano reggiano cheese that is salty). Once is cooked, let it cool. Reserve.





To do the dough, mix the salt and flour. Add the olive oil, and warm water as needed to make an elastic dough. Pass it through the rolls of the pasta maker until number 7. It has to be a very thin dough. 

In a pie dish, put a thin layer of the dough, and brush it with a mix of olive oil and butter. Continue putting layer, brushing each one with butter and olive oil. Usually, I make six layers. You can do more or less.



Beat the eggs and incorporate the cooked (and cold) artichoke. Incorporate the ricotta, marjoram and parmiggiano reggiano. Distribute evenly over the pie dough.

 




Cook it in a preheated oven at 400F for 20-30 minutes, or until fully cooked and golden brown. Pasqualina is eat it warm or cold (I like it cold) with a touch of a very good olive oil on top.  Enjoy it!!!
