Gelatina y Mousse de Frutillas....una rica combinacion....



Parece que hoy día es dia de cosillas dulces, muchos blogs que he visitado están poniendo fantásticas recetas de tortas, bizcochos y dulces en general!! ......Por lo tanto, quiero contribuir a hacer este día aun mas dulce con un postre que nos gusta mucho: gelatina de frutillas con mousse de frutillas....... Disfrútelo!!

Había empezado a escribir este post, cuando me entere que una querida amiga de este mundo blogueril estaba celebrando su cumpleaños  Amandita de La Cocina de Amandita !!!.....y todos los blogs están felices cantándole  aaapioooo-veerrrdeeee-tuuu-yuuuu Si usted no conoce su blog, entonces le recomiendo lo visite.......esta lleno de maravillosas recetas............

Receta:
450 gramos de frutillas (yo use frescas, pero pueden ser congeladas)
75 gramos de azúcar (mas o menos dependiendo de su gusto)
3 cucharadas de agua de rosas
Gelatina (tiene que medirse después de cocer las frutillas. Es 1 cucharadita de gelatina por taza de frutillas cocidas)
350 ml de crema para batir (nata para batir)
2 cucharadas de azúcar impalpable 
Gotas de vainilla



Lave las frutillas frescas, córtelas en pedazos y póngalas en una olla. Cúbralas con azúcar y agua de rosas, cocínelas por 7 minutos. Deje enfriar.


Cuando las frutillas estén frías, triturelas en una juguera. Esto debiera dar aproximadamente 4 tazas de pure de frutillas. Ponga 2 tazas y media de vuelta a la olla. Mientras, mida 1 cucharadita de te de gelatina por taza de pure de frutillas (en este caso dos cucharadas y media de gelatina), cubra con agua fría y deje hidratarse. Empiece a calentar las frutillas, y coloque la gelatina. Cuando empiece a hervir, baje la temperatura y cocine por tres minutos. Apague y deje enfriar. Cuando este fría, sirva en vasos hasta la mitad. Pongala en el refrigerador. He hecho esta receta dos veces, y para mi una cucharadita de gelatina hace esta porcion muy dura. La segunda vez use menos gelatina. Como usamos distintos productos y marcas, vea usted la cantidad de gelatina que quiere usar.

Meses atrás vi un blog con un postre similar, pero con queso mascarpone en vez de crema para batir, ahí ponían la gelatina inclinada. Me gusto esta idea, pero no recuerdo el blog donde lo vi. Si Usted ha visto esta idea, le pido me diga para darle los créditos apropiados :). Puse los vasos inclinados en una bandeja para darle esa forma.

Acabo de encontrar donde vi esta idea.....la receta usa mascarpone y yo use "nata para montar" o "crema para batir" depende del pais es el termino que se usa    este es el sitio   http://yoli-www.blogspot.com/2010/06/blog-post_30.html    esta en Búlgaro.....pero puede traducirlo con Google.....tiene unas fotos preciosas.....ojalas les guste este blog!! 


Ponga el remanente de 1 taza y media de puré de frutillas en la olla. Mientras, mida 1 cucharadita de te de gelatina por taza de pure de frutillas (en este caso una cucharada y media de gelatina), cubra con agua fría y deje hidratarse. Empiece a calentar las frutillas, y coloque la gelatina. Cuando empiece a hervir, baje la temperatura y cocine por tres minutos. Apague y deje enfriar. En este caso use la porcion de gelatina indicada, porque se mezcla con la crema.

Bata la crema con el azúcar impalpable hasta que este firme (mas o menos según su gusto), y con gotas de vainilla. Cuando la crema este firme, incorpore el puré de frutillas frió.  Incorpore con suavidad, y coloque la mezcla sobre la gelatina de frutillas cuando esta este firme. Puede poner los vasos parados en este momento.


Decorar con frutillas partidas y hojas de menta....Disfrutelo!





Strawberry Gelatine and Mousse....nice combination....




It seems that today is a sweet day, many blogs are posting delicious sweet treats!!; therefore, I want to contribute to make this day a very sweet one with a dessert that I like very much. It is a Strawberry Gelatine with Strawberry Mousse.......Enjoy it!!

Also, I was starting to write this post, when I knew that a dear friend from this blog world Amandita from La Cocina de Amandita is celebrating her Happy Birthday!!.....and we are all happy singing with her aaapioooo-veerrrdeeee-tuuu-yuuuu If you don't know her blog, then I recomend you to visit it. It is full of wonderful recipes.....

Recipe:
450 grams of strawberries (I used fresh, but it can be frozen)
75 grams of sugar (more or less depending on your taste)
3 spoons of Rosewater
Gelatine (you have to measure it after the strawberries are cooked. It is 1 teaspoon of gelatine per cup of cooked strawberries)
350 ml of whipping cream
2 spoons of powder sugar
Vanilla drops



Wash the fresh strawberries, cut them in slices and put them in a pot. Cover them with sugar and rosewater, and cook them for 7 minutes. Let it cool.


Once the strawberries are cold, blend them in a blender. This pure should give you around four cups of strawberries pure. Put two and a half cups back in the pot. In the meantime, measure one teaspoon of gelatine per cup of strawberries (in this case two and a half teaspoons of gelatine), cover it with cold water, and let it hydrated. Start heating the strawberries, and add the gelatine. Once it starts boiling, turn down the heat and let it boil for three minutes. Turn it off the stove, and let it cool. Once it is cold, serve it in the glasses that you like it at half. Put it in the refrigerator. I have done this recipe twice, and for me one teaspoon of gelatine makes this portion very hard. The second time, I added less gelatine and the result was softer. It is up to your taste and preference the quantity of gelatine to be used. 

I saw months ago a blog with a similar dessert, but with mascarpone cheese instead of whipping cream, and they put the strawberry gelatine inclinated. I took the idea of doing that shape, but I don't remember the blog. If it happens that you have seen it, then let me know to give it the appropriate credits  :). I put the glasses inclinated over a tray in the refrigerator to have that shape.

Put the remaining one and a half cup of the blended strawberries in a pan. In the meantime, measure one teaspoon of gelatine per cup of strawberries (in this case one and a half teaspoons of gelatine), cover it with cold water, and let it hydrated. Start heating the strawberries, and add the gelatine. Once it starts boiling, turn down the heat and let it boil for three minutes. Turn it off the stove, and let it cool. In this case, and in both times that i made it, I used the amount of gelatine suggested because this portion has a cream.

Beat the whipping cream with the powder sugar (more or less up to your taste), and add the vanilla drops. Once the cream is very firm, add the cold blended strawberries. Fold it with softness, and put over the gelatine strawberry once this one is firm. You can put the glass upright now.


Use some sliced strawberries to decorate along with mint leaves.....Enjoy it!!

Diferentes Rellenos Para Deliciosos Panes Trenzados



Yo quería publicar las recetas de estos rellenos el viernes, pero no fue posible. Nosotros, junto con unos amigos, habíamos planeado un viaje para ver a dinosaurios fósiles con nuestros hijos este fin de semana.  Sabíamos que sería una de los últimos fines de semana  hermoso antes de la llegada del invierno ..... Sí .... invierno.... y sabemos el significado del invierno .....- 35C a -40C ...... y sin posibilidades de viajar fuera de la ciudad.

Como no pude publicarlo, tomé mi ordenador portátil conmigo con el fin de hacerlo desde la habitación del hotel en la noche del viernes. Salimos de casa, y estábamos a mitad de camino (se trataba de un viaje de 4 horas), cuando nuestra hija comenzó a enfermarse, y tuvimos que volver a casa. Ella está bien ahora, pero nos fuimos a dormir a las 3 am de la mañana de la madrugada del sábado, y el resto del fin de semana estuvo muy ocupado con esta situación. Sin embargo, el café siempre ayuda!.....aquí estoy publicando los rellenos .....


Los rellenos para los panes trenzados que ya he publicado son:


1) Compota de fresas y crema de queso
Para este relleno, he utilizado el relleno como se describe en la receta de Hilmar (Por favor, tenga en cuenta que su receta de relleno es para dos panes trenzados). Sin embargo, hice mi compota de fresa propios de la siguiente manera (para un pan trenzado):


150 gramos de fresas
30 gramos de azúcar (más o menos dependiendo de su gusto)
1 cucharada de agua de rosas


Lavar y cortar las fresas. Distribuirlas en una cacerola, y  encima el azúcar. Ponga en la estufa a una  temperatura media alta, y pasarla a fuego lento una vez que empiece a hervir. Agregue el agua de rosas y cocine por tres minutos. Deje que se enfríe. Extender la crema de queso como base del relleno, y distribuir en la parte superior la compota de fresa. Recomendación: Colar la compota de fresa antes de colocarlo en la parte superior del queso crema.




2) Mazapán (esta es mi receta para mi Galette de Rois)
Este es muy fácil de hacer. Sin embargo, debido a que nuestras cocinas y productos que utilizamos son diferentes, le recomiendo que vea la densidad del mazapán como se muestra en la imagen. Si sucede que el mazapán que Usted haga es menos denso en comparación a lo que se muestra en la imagen, entonces le recomiendo aumentar la maizena.


Para el mazapán:
150 gramos de almendras peladas
100 gramos de azúcar en polvo
2 huevos
75 gramos de mantequilla (blanda)
2 cucharadas de maizena
Esencia de almendras


Moler las almendras hasta que estén finas, pero no como harina. Transfiera a un bol, añadir el azúcar y la mantequilla y batir bien con un tenedor. Añadir los dos huevos, la maizena y unas gotas de esencia de almendra. Pruebe de la densidad, y añadir más maizena si es necesario.


Esta cantidad de mazapán es demasiado para un solo pan trenzado (como lo demostró mi primer pan trenzado de mazapán). En todo caso, depende de usted y de sus ganas de comer con mas o menos relleno. Esta cantidad es para dos trenzas. El segundo pan trenzado tiene la mitad de este relleno, y funcionó muy
bien.





3) Mermelada de Naranja y Queso Crema


Para este relleno, he utilizado el relleno como se describe en la receta de Hilmar (Por favor, tenga en cuenta que su receta de relleno es para dos panes trenzados). Sin embargo, puse mermelada de naranja que tenía, y funciono muy bien. Usted puede utilizar su propia mermelada o confitura, pero debe usar el relleno de queso crema de la receta de Hilmar.




4) Espinacas y Queso Crema


Como se puede ver en la receta original, esta masa utiliza azúcar. Sin embargo, para esta versión salada, he usado el azúcar sólo en la esponja, pero no en la masa. En cambio, usé más sal (menos de una cucharadita de te).


Para un pan trenzado:


150 gramos de espinacas congeladas
80 gramos de queso crema
30 gramos de yogur griego
15 gramos de harina
1 huevo
2 cucharadas de queso feta (lo aplastados con un tenedor antes de añadir a la mezcla)
1 diente de ajo (picado)
Sal
Pimienta
Nuez moscada
Hierbas de la Provenza
Queso parmesano


Descongele las espinacas, y hervir durante tres minutos. Escurrir muy bien, deje que se enfríe y lo pica en trozos pequeños. En un tazón, mezcle el queso crema, el yogur griego, harina, huevo y queso feta. Mezclar bien. Agregar la pimienta, la nuez moscada, y hierbas de la Provenza. Mezclar bien. Agregar las espinacas picadas y el ajo. Ponga sal si necesita. Compruebe la densidad (como se muestra en la imagen). Si tiene que secarla, a continuación, utilizar el queso rallado parmesano.




Para el viaje del viernes, hice una fritatta de espinaca y arroz (lo publicare más adelante), y un pan trenzado con una mezcla de rellenos de los restos de los panes trenzados (nos comimos ambos durante el Sabado y Domingo....no hubo tiempo para cocinar este fin de semana). He utilizado una mezcla de queso crema,

mazapán y mermelada de naranja. Sin embargo, dado que puse más relleno, lo dejé subir la segunda vez durante 90 minutos en lugar de 60 minutos (el tiempo depende de la temperatura ambiente de su cocina). Lo hice aumentar a más del doble, por lo que cerró todos los agujeros antes de poner en el horno. El resultado fue fantástico!. Más de relleno y más esponjoso. Que lo disfruten!

Different Fillings for a Delicious Braided Bread



I wanted to post these fillings' recipes on Friday, but it was not possible. We, along with friends, had planned a trip to see Dinosaurs fossils with our kids for the weekend. We knew that it would be one of the last beautiful weekends before the winter arrival.....Yes....winter arrival....and we know the meaning of winter.....-35C to -40C......and no chances to travel outside the city at all.

I could not post it, but I took my laptop with me in order to do it from the room hotel on Friday night. We left home, and we were half way through (it was a 4 hours driving trip), when our daughter started to get sick, and we had to come back home. She is doing well now, but we went to sleep at 3am on Saturday morning, and the rest of the weekend was very busy because of her situation. Nevertheless, coffee always help!.....and here I am posting the fillings.....


1) Strawberry Compote and Cheese Cream

For this filling, I used the filling as described in Hilmar's recipe (please note that her filling recipe is for two braided breads). Nevertheless, I did my own strawberry compote as follows (for one braided bread):

150 grams of strawberries
30 grams of sugar (more or less depending on your taste)
1 spoon of rose water

Wash and slice the strawberries. Distribute them over a pan, and place on top the sugar. Put in the stove at a medium high temperature, and turn it to low heat once starts boiling. Add the rose water and cook it for three minutes. Let it cool.

Spread the cheese cream filling, and distribute on top the strawberry compote. Recomendation: Strain the strawberry compote before placing it on top of the cream cheese.



2) Marzipan (this is my recipe for my Galette de Rois)

This is a very easy filling. Nevertheless, because our kitchens and products that we used are different, I recommend you  to see the density of the marzipan as shown in the picture. If it happens that your marzipan mix is less dense then what is shown in the picture, then I recommend you to increase the corn starch.



For the marzipan:

150 grams of peeled almond
100 grams of powder sugar
2 eggs
75 grams of butter (soft)
2 tablespoon of corn starch
Almond essence

Grind your almonds until they are very fine, but not flour texture. Transfer it into a bowl, add the sugar and butter and beat it well with a fork. Add the two eggs, the corn starch and few drops of almond essence. Test for density, and add more corn starch if needed.

This amount of marzipan is too much for one braided bread (as I proved it in my first Marzipan Braided Bread). I will use this filling for two braided bread, but it is up to you and your desire. The second marzipan braided bread that I did has half of this filling, and it worked very well.

3) Orange Marmalade and Cream Cheese

For this filling, I used the filling as described in Hilmar's recipe (please note that her filling recipe is for two braided breads). Nevertheless, I just put Orange Marmalade that I had, and it works very well. You can use your own marmalades or jam, but using Hilmar's cream cheese filling.



4) Spinach and Cream Cheese

As you can see from the original recipe, this dough uses sugar. However, for this salty version, I used sugar only in the sponge, but not in the dough. Instead, I used more salt  (less than a teaspoon).

For one braided bread:

150 grams of frozen spinach
80 grams of cream cheese
30 grams of greek yogurt
15 grams of flour
1 egg
2 tablespoon of feta cheese (I crushed it with a fork before adding to the mix)
1 garlic (crushed)
Salt
Pepper
Nutmeg
Herbs de la Provence
Parmiggiano Cheese

Defrost the spinach, and boil it for three minutes. Drain it very well, let it cool and chopped it. In a bowl, mix the cream cheese, greek yogurt, flour, egg, and feta cheese. Mix it well. Add the pepper, nutmeg, and herbs de la Provence. Mix it well. Add the chopped spinach and the garlic. Taste if salt is needed. Check for density (as it is shown in the picture). If you need to dry it, then use grated parmiggiano cheese.



I use this mix for the spinach filling, I did not put cream cheese as a base.

For the road on our Friday's trip, I made a spinach and rice fritatta (I will post it later), and a braided bread with a mix of fillings that were left over from the other braided breads (we eat them both on Saturday and Sunday....no time for cooking this weekend....). I used a mix of cream cheese, marzipan, and orange marmalade. However, because I put more filling than expected, I let it raise the second time for 90 minutes instead of 60 minutes (time will depends on your kitchen's room temperature). I let it raise to more than a double; thus, it closed all the holes before I put it in the oven. The result was fantastic!. More filling and more spongy. Enjoy it!!

As you can see....you need to cut four squares in each corner before doing the filling.....What I did with that left over dough?

1) Empanada filled with cheese cream and marzipan
