Indian Lemon Rice

 





In India you eat a variety of rice dishes. This is a tasty, savory, different type of rice that combines very well with all the range of spicy Indian food.


Ingredients

2 cups of cooked and cold basmati rice

1 1/2 teaspoons of turmeric

1 teaspoon of mustard seeds

2 tablespoons of toor dal split soaked in warm water for 1 hour

2 tablespoons of cashew or peanuts

1 piece of ginger grated or finely chopped (2 cm)

2 pieces of dry red chili whole

salt

oil

1/2 lemon juice

12 curry leaves fresh

In a pan, heat the oil and add the mustard seeds. When they are popping, add the toor dal and cashew and fry them until golden. Add the ginger, curry leaves, turmeric, and whole dry chili. Let it simmer at very low temperature for 1 minute. Add the rice, stir it well to make it yellow, and add the lemon juice. Correct it for salt. Serve it warm. ENJOY!!


Serve it with Malai Kofta

  3. Wow does that rice ever look good. I had a bag of split toor dal and did not know what to do with it, so I gave it to my neighbor who is from India. Maybe she will give me back tablespoons to try this recipe! (ha ha).Can't wait to try this recipe.Yum!
