I'm always looking for something sweet for my coffee on weekends, and I always try new recipe for alfajores!
75 g sugar
1 lemon zest
170 g unsalted butter, diced
2 tablespoons whole milk (or more)
4 egg yolks
170 g all purpose flour
170 g cornstarch
1/2 tsp baking powder
desiccated coconut
dulce de leche
In a food processor, mix sugar and lemon zest. Add the butter, milk and egg yolk. Incorporate the flour and corn starch. Mix well. If needed, then add milk. It has to be a dough dry enough that you can work with a roll pin. Place it in the fridge for 30 minutes.
With a roll pin, flatten it at 1/2 cm. Place it on a parchment paper on an oven tray. Bake it at 375F for 8 minutes or until golden brown. Fil it with dulce de leche and cover it with desiccated coconut. ENJOY!
I haven't had alfajores in ages!! These look perfect.
