I love this almond cookies......I tried them in Holland, and now I'm baking them at home....
Almond paste
125 grams of grinded almonds
110 grams sugar
1 egg
1/2 teaspoon of lemon zest
1/2 teaspoon almond essence
Dough
320 grams of flour
180 grams cold butter cut into small pieces
150 grams sugar
1 egg
Some almond halves to decorate
In a food processor, combine the ingredients of tha almond paste until you have a smooth paste. Set aside.
In a food processor or by hand, combine the flour and sugar, add the butter. Then add the egg, and some water if you need it. Make a cookie dough that can be worked with a roll pin. Let it rest for 30 minutes in the fridge.
With a roll pin, make a 3mm thick dough. Cut them in circles with a cutter. Place half of the circles on a parchment paper on a baking tray. With your hands, make a small ball of the almond paste, and flatten it. Place it on a half of the circle, and with a beaten egg, brush the edges. Place the other half of the cookie on top. Brush it with the beaten egg, and decorate it with an almnd slice. Bake them in a preheated oven at 325F for 18 minutes or until golden bron. ENJOY!
These marzipan filled cookies look so very yummy and would make a great addition to the holiday cookie tray too.
