Celebrating Canadian Thanksgiving....Pear and Goat Cheese Cake

 


It is this time of the year again where we celebrate our Canadian Thanksgiving. Even though we have moved from Canada, we continue with our celebrations that touched our hearts and connected us to our friends....It is always good to give Thanks!

I did this recipe many Thanksgivings ago, and I repeated this year with some twists... again we love it!!


Pear and Goat Cheese Cake

3 ripe (but firm) pears

100 grams of almonds

2 egg

3 tablespoons sugar + 1/4 cup sugar

3/4 cup of flour

2 tablespoons of butter

2 teaspoon baking powder

120 grams of goat cheese

1 teaspoon vanilla bean paste

milk

spices: cinnamon, cloves, star anise


Peel the pears. Place the peel in a pot with 1 cup of water, spices 1/4 cup of sugar. Let it boil for 5 minutes. Take the pear peel out. Place the pears. Just cover them halfway with water. Cook for 3-4 minutes (they have to be firm) each side. Take out the pears. Reduce the water until it has the consistency of a syrup. Let it cool down.

Mix the almonds with the flour. Separate the whites from the yolks. Beat the egg whites until peaks form. Beat the yolks with the sugar until creamy. Add the butter, goat cheese, and vanilla paste. Add the mixture of the flour and the almonds, and the baking powder. If necessary, add a little milk (about 2 tablespoons). Incorporate the beaten egg whites with slow movements.

Grease and flour a casserole. Place a pear in the middle, and surround it with the mixture. Bake in oven preheated to 350 F for 20 minutes or until cooked through. Before serving, make some holes with a bamboo stick and moisten with the syrup. Enjoy!
